About These Luscious Lemon Bars
- This recipe has two parts; The base, a shortbread crust, and the filling, which is more fluid and firms up as it bakes.
- We need flour, egg, butter, and powdered sugar for the shortbread base, as in other shortbread recipes.
- Use the room-temperature butter to mix with the powdered sugar and egg. In the end, add the extracts, which are vanilla and lemon extract. Because these Lucious Lemon Bars use many eggs, I recommend using lemon extract to bring some aroma to the recipe.
- This recipe uses yolks and whole eggs. Yolk adds more bonding and structure to the lemon filling.
- Line an 8X8-inch square pan with parchment paper, then press the shortbread dough down into the pan, smooth it out and perk the surface with a fork. Place it in the fridge for 15 minutes, then bake for 15 minutes until golden. Let it cool down.
How To Make The Filling
- For the lemon filling, use a stand mixer or hand mixer to beat the eggs, yolks, sugar, and extracts. Add the lemon juice and zest once the mixture is well blended. Fold in the flour and mix until it is lump-free.
- Pour the filling over the base, and bake the whole pan for 30-35 minutes until you shake it; it is firm enough and not liquid.
- Let the pan cool down on a cooling rack for half an hour, then transfer the pan to the fridge for 4-5 hours before cutting these delicious Luscious Lemon Bars.
- Dust the surface with dusting sugar for a more appealing look.

Ingredients
FOR THE CRUST
- ¾ cup Butter, Room temperature
- ½ cup Powdered sugar
- 1 Egg, Room temperature
- 1 teaspoon Vanilla extract
- 1 teaspoon Lemon extract
- 1½ cup All-purpose flour, Spooned and leveled
- ¼ teaspoon Salt
FOR THE FILLING
- 4 Eggs, Room temperature
- 2 Yolks, Room temperature
- 1½ cups Granulated sugar
- ¼ cup All-purpose flour, Spooned and leveled
- ½ cup Lemon juice, Freshly squeezed. About 3-4 lemons
- 1 tablespoon Lemon zest, About 1 large lemon
- 1 teaspoon Vanilla extract
- ½ teaspoon Lemon extract
- ¼ teaspoon Salt
- 1 tablespoon Powdered sugar, For dusting the top
Instructions
How To Make The Crust
- Line an 8X8 glass or metal pan with parchment paper and grease the paper with oil spray or butter. Leave an overhang for easy lifting.
- Use the paddle attachment or hand mixer to beat the butter and powdered sugar, then add the egg and extracts. Mix well.¾ cup Butter, ½ cup Powdered sugar, 1 Egg, 1 teaspoon Vanilla extract, 1 teaspoon Lemon extract, ¼ teaspoon Salt
- Fold in the flour and mix. Press the dough at the bottom of the lined pan, smooth it out and perk with a fork. Place in the fridge for 15 minutes.1½ cup All-purpose flour
- In the meantime, preheat the oven to 350℉. Bake the crust for 15-20 minutes and let it cool down.
How To Make The Filling
- Use a whisk attachment or hand mixer to beat the eggs, yolks, and sugar.4 Eggs, 2 Yolks, 1½ cups Granulated sugar
- Add in the extracts and lemon juice, and mix well.1 teaspoon Vanilla extract, ½ teaspoon Lemon extract, ½ cup Lemon juice
- Fold in the flour and salt, gently mix, and in the end, add the lemon zest, and mix.¼ cup All-purpose flour, 1 tablespoon Lemon zest, ¼ teaspoon Salt
- Pour the mixture over the cool base. Tap the pan on the counter a few times to bring up the bubbles. Bake for 30-35 minutes or until the filling looks firm when shaking the pan.
- Let the pan cool down on a cooling rack for 30 minutes, then transfer it to the fridge for 3-4 hours before cutting.
- Dust the top with dusting powder for a more appealing look.1 tablespoon Powdered sugar

- Make sure the eggs and lemon juice are at room temperature.
