    What screams summer better than the refreshing taste of freshly squeezed lemons?! This recipe is talking about light, fluffy, refreshing, and super easy to make, Fluffy Lemon Donuts. These donuts contain freshly squeezed lemon juice and grated lemon zest. As a result, they have an amazing lemony and citrusy aroma and flavor.

    About This Recipe

    • These donuts come together very quickly, and The bake time is only 10 minutes.
    • Did I say bake time?! yes, these are baked donuts. We can say, they are on the healthy side of the donut row!
    • There is freshly squeezed lemon juice and fresh lemon zest used in this recipe, and that is why donuts are very aromatic and flavorful.
    • I have added corn starch to the batter, to create that fluffy and cloud-like texture.
    • I used the cake donut pan, but the classic ring donut pan works perfectly. This is what I used Donut Pan
    • The acid in the buttermilk reacts to the baking powder, and makes the batter rise and expand.
    • To have a very fine sugar/ lemon zest mixture, I recommend using a small processor and blitzing the sugar and the lemon zest to reach a very fine sugar mixture. This will give the donuts a velvety surface.

    How To Make Fluffy Lemon Donuts

    • This is a two-bowl recipe. All dry ingredients go into one bowl, and the wet ingredients get incorporated in a separate bowl. Just mix them up, and that's it 🙂 Making donuts cannot be easier than this.
    • Set the oven at 425°F. These lemon donuts need to bake quickly to keep the fluffy and tender texture.

    Storing

    Donuts are better when they are served warm and fresh. I prefer to use them up within a couple of hours.

    Ingredients
     

    For The Donuts

    • 1¾ cups All-purpose flour, 220 gr., Spooned & leveled
    • ¼ cup Corn starch
    • ¼ cup Butter, melted
    • ¾ cup Buttermilk, Room temperature
    • ¾ cup Sugar
    • 2 Eggs, Room temperature
    • 2 teaspoon Baking powder
    • ¼ teaspoon Salt
    • ¼ cup Lemon Juice, Freshly squeezed
    • 1 tablespoon Lemon zest
    • 1 tablespoon Vanilla extract
    • ½ teaspoon Lemon extract, Optional

    For The Topping

    • ¼ cup Butter, Melted
    • ½ cup granulated sugar
    • 2 tablespoon Lemon Zest
    • ¼ teaspoon Vanilla extract

    Instructions
     

    How To Make The Donuts

    • Preheat the oven to 425°F. Oil spray a 12- cavity donut pan and set aside.
    • In a large bowl, whisk together flour, cornstarch, sugar, baking powder, and salt, set aside.
      1¾ cups All-purpose flour, 220 gr., ¼ cup Corn starch, ¾ cup Sugar, 2 teaspoon Baking powder, ¼ teaspoon Salt
    • In a separate bowl, mix the buttermilk, eggs, melted butter, lemon juice, lemon zest, vanilla extract, and lemon extract. Mix until well blended and smooth.
      ¼ cup Butter, melted, ¾ cup Buttermilk, 2 Eggs, ¼ cup Lemon Juice, 1 tablespoon Vanilla extract, ½ teaspoon Lemon extract, 1 tablespoon Lemon zest
    • Make a well in the center of the flour mixture, and pour the above mixture into the well. Start mixing from the side to the center, until all the flour is incorporated. DO NOT OVERMIX.
    • Pour the batter into a piping bag and fill up the pan's cavities. Fill up to ⅔ of the cavity. You can also use a spoon to divide the batter.
    • Bake for 8-10 minutes, until the edges are set and slightly golden. Remove from the oven and let cool down for a few minutes, then transfer to the cooling rack.
    • Meanwhile, prepare the topping.

    How To Make The Topping

    • Mix the sugar and the lemon zest. It is better to use a food processor. The goal is to have a very fine mixture.
      ½ cup granulated sugar, 2 tablespoon Lemon Zest
    • Melt the butter, and add to the above mixture. Add in the vanilla extract. Mix well.
      ¼ cup Butter, ¼ teaspoon Vanilla extract
    • While the donuts are still warm, dip the downside of them into the sugar mixture, and let the mixture set. Serve fresh.
