    If you are looking for a cookie recipe that is easy, delicious, and pretty, here is your answer. These cookies do not require any chilling time and get ready very quickly. They are topped with confetti sprinkles. I use these,Rainbow SprinklesThat is totally up to you if you want to use sprinkles or not, and what color sprinkles to use. This Confetti sugar cookie recipe is perfect for an afternoon party or kids' birthday party!

    About This Recipe

    • These sugar cookies are very easy to make and don't require any chilling time.
    • The texture of these cookies is very soft and chewy. If you want them to be more crunchy, make them thinner.
    • The ingredients are super easy, and you already have them in your pantry.
    • The choice of sprinkles is endless. These can be modified to serve different occasions. Use red and pink sprinkles for Valentine, or Red and green for Christmas, etc.
    • The size of the cookies again is up to you how large you like them. I recommend the medium size.

    How To Make These Confetti Sugar Cookies

    • Let's start with the room temperature butter. This recipe does not use any eggs, so the butter has to be at room temperature to make the batter moist and mixable.
    • Most cookie recipes start with beating sugar and butter, this recipe has the same first step. Beat the soft butter and sugar until the mixture is pale and fluffy.
    • Using a rubber spatula, add the flour and make sure the flour is spooned and leveled. Too much flour makes hard cookies. Do not overmix.
    • Add the clear vanilla extract. We want these confetti sugar cookies to be as bright as possible.
    • Make small balls of the dough and roll each in the fine granulated sugar, then place them on the baking sheet. Leave at least a 2-inch space between them.
    • Put some sprinkles on each ball, and withe a flat bottom glass or measuring cup, press each ball down to make a small disc. The thickness should be about ¼ of an inch. If you press the dough too much, the cookies will be too thin and will not be as soft.
    • Set your oven to 325 and bake them for 15 minutes.

    Disclaimer: I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.

    Ingredients
     

    • 1 cup Butter, Room temperature
    • ⅔ cup Sugar
    • 2¼ cups All-purpose flour, Spooned and leveled
    • 1 teaspoon Vanilla extract, Clear
    • ¼ cup Rainbow sprinkle
    • ¼ cup Sugar, For coating

    Instructions
     

    • Preheat the oven to 325°F, line two baking sheets with parchment papers, and set aside.
    • Using a stand mixer set on whisk attachment, beat the butter and the sugar until light and fluffy. Add the vanilla extract.
      1 cup Butter, ⅔ cup Sugar, 1 teaspoon Vanilla extract
    • Using a rubber spatula, fold in the flour and gently mix. DO NOT OVERMIX.
      2¼ cups All-purpose flour
    • Make mall balls of the dough, and roll them in the sugar. Place them on the baking sheet.
      ¼ cup Sugar
    • Sprinkle some sprinkles on each ball, and then press each ball with a flat-bottom glass or measuring cup to flatten the cookie ball. The thickness should be ¼ of an inch.
      ¼ cup Rainbow sprinkle
    • Bake for 15 minutes. Leave on the sheet for 5 minutes. then transfer to the cooling rack.
