These Margarita cupcakes are easy to make, refreshing, delicious, and a perfect summer dessert. This cupcake recipe includes all the ingredients that a classic margarita has. To create a real margarita flavor, I have incorporated, fresh lime juice, key lime zest, and Tequila.
About This Recipe
- This recipe uses freshly squeezed lime juice and lemon zest. Grated lime zest has a very fresh and distinct aroma and adds a lot of citrusy flavor to any drinks or baked goods. In this recipe, we are using a ton of lime zest in both the cupcakes and the frosting.
- We are using freshly squeezed lime juice. I recommend using freshly squeezed lemon juice instead of store-bought ones.
- As the margarita drink recipe calls, tequila is one of the main ingredients in this recipe. We use only a small amount of tequila in this recipe to add flavor. Any kind of tequila works fine.
- I have garnished the finished cupcakes with coarse salt flakes just like a real margarita drink!
- The other ingredients are just the basic ingredient that we would use to make cupcakes with a margarita twist.
- The frosting is the American style buttercream, and to make the buttercream more stabilized especially on a hot summer day, I am adding a teaspoon of Meringue Powder to the buttercream! Meringue powder is a dry powder that is mainly pasteurized dried egg whites that are ground into a fine powder. It helps to absorb the moisture in the buttercream to make it firmer. How To Make These Margarita Cupcakes
Let's make The Cupcakes First;
- This recipe makes about 16-18 cupcakes. Prepare your muffin pan with cupcake liners.
- Sift all the dry and set aside. Start with beating the butter, oil, and sugar until light, pale and fluffy.
- Add in the eggs, one at a time, and beat between each one. At this stage, the more you beat the batter the better. The result will be a fluffy and light crumb.
- Add in the lime juice, zest, vanilla extract, tequila, and mix.
- When it comes to this buttercream, it is totally up to you how much tequila flavor you like to taste, and the same for the lime juice. It depends on how sour tasing you like the buttercream to be. Add or reduce these two ingredients accordingly (Tequila & Lime Juice)
- Add in the dry ingredients alternating with milk, start and finish with dry.
- Fill in cupcake liners to ⅔ of their capacity, and bake.
How To Make The Frosting;
- We start with beating the room temperature butter. For any kind of American buttercream, beating the butter well is a key! Beat the butter until it is light, fluffy, pale, almost white.
- In a small bowl mix the Meringue Powder with one cup of the powdered sugar. Add poonfull of this mixture to the butter and mix well. After the whole cup is added, add the rest of the mixture in spoonfull.
- Add the lime juice, vanilla extract, tequila, and the lemon zest and mix.
- If the buttercream is too runny add more powdered sugar, and if it is too dry add a couple tablepoon heavy cream.
- Frost the cool cupcakes and enjoy 🙂

Ingredients
For The Cupcakes
- 1 cup Butter, Room temperature
- ½ cup Oil
- 1½ cup Sugar
- 1 tablespoon Vanilla extract
- 1 tablespoon Tequila
- ¼ cup Lime juice, About 4 limes
- 1 tablespoon Lime zest, About 3 limes
- 3 Eggs
- 2 cups All-purpose flour, Spooned and leveled
- 2 tablespoon Corn starch
- 1½ teaspoon Baking powder
- ¼ teaspoon Salt
- ½ cup Milk, 2%
For The Frosting
- 1½ cups Butter, Room temperature
- 4 cups Powdered Sugar, Sifted
- 1 teaspoon Meringue Powder
- 1 teaspoon Vanilla extract
- ¼ cup Lime juice
- 1 teaspoon Lime zest
- 2 tablespoon Tequila
- 1 tablespoon Coarse salt, For garnishing
- 1 teaspoon lemon zest, For garnishing
- Lime wedges, For garnishing
Instructions
How To Make The Margarita Cupcakes
- Preheat the oven to 350°F. Line a 16 cavity muffin pan with liner and set aside.
- sift the dry ingredients and set them aside.2 cups All-purpose flour, 2 tablespoon Corn starch, 1½ teaspoon Baking powder, ¼ teaspoon Salt
- Beat the butter, oil, and sugar until light, fluffy, and pale.1 cup Butter, ½ cup Oil, 1½ cup Sugar
- Add the eggs, one at a time. mix well between each addition.3 Eggs
- Add in vanilla extract, lime juice, lime zest, and tequila. mix well.1 tablespoon Vanilla extract, ¼ cup Lime juice, 1 tablespoon Lime zest, 1 tablespoon Tequila
- Using a rubber spatula, add half of the dry ingredients alternating with half of the milk. DO NOT OVERMIX.½ cup Milk
- Fill the muffin pan to ⅔ of the capacity of each cavity.
- Bake for 20-25 minutes or until an insert comes out with a few tiny crumbs.
- Let cool in the pan for 10 minutes, then transfer to the cooling rack. Let cool completely before frosting.
How To Make The Frosting
- Beat the butter until light, fluffy, and pale.1½ cups Butter
- While the butter is beating, in a small bowl mix one cup of the powdered sugar with the meringue powder. Gradually add this to the butter. Then add the remaining powdered sugar.4 cups Powdered Sugar
- Add in the vanilla, lime juice and zest, and tequila. Mix well.¼ cup Lime juice, 1 teaspoon Lime zest, 2 tablespoon Tequila, 1 teaspoon Vanilla extract
- If the buttercream is too dry add a couple of tablespoons of lime juice, and if it's too runny add more powdered sugar. one tablespoon at a time.
- Decorate the cool cupcakes with any piping tip you like. Garnish the top with coarse salt, lime zest, and lime wedges.
