Easy, super easy ginger snap cookies packed with a ton of spices.
Ginger snaps are one of my favorite cookies 😀 and what I like about these cookies is that they snap and are chewy as well. I mean they are thin and light, with a soft center.
About this recipe
- This cookie dough comes together very quickly. You do not even have to have a stand mixer.
- The ingredients are very basic and no fancy ingredients are needed.
- This recipe is packed with a whole bunch of aromatic spices, and it uses more ginger than other spices.
- There is a good amount of brown sugar as well as molasses in this recipe. Both these ingredients give a lot of flavors, deep color, and moisture to the cookies. Molasses
- This cookie dough needs to chill only for an hour, and after chill time the dough will still be loose because no butter is used in the recipe.
- In this batch of cookies, I have rolled some in granulated sugar and some in turbinado sugar, just to have a different look.
- The cookies will expand quite a bit, so make sure to leave at least 2 inches of space between them.
How To Make The Ginger Snap Cookies
- Line the baking sheets with a silicon mat or parchment paper.
- Sift together the flour, spices, and leavenings, and set them aside.
- Mix two sugars and the vegetable oil, then add the egg and the vanilla extract. Whisk them vigorously until well blended and lighter in color.
- Add vanilla extract and molasses. Mix well.
- Add in the dry ingredients until no trace of flour is seen. Do not overmix.
- Cover the dough with cling wrap and chill for one hour.
- Scoop the dough onto a small ball, then roll each in the sugar.
- Place them on the lined baking sheets and bake.

Ginger Snap Cookies

Ingredients
- 1 cup Brown sugar, Packed
- ¼ cup sugar
- ¾ cup Oil
- 1 Egg, Room temperature
- ⅓ cup Molasses
- 1 tablespoon Vanilla extract
- 2 cups All-purpose flour
- 2 teaspoon Ginger
- 1 teaspoon Cinnamon
- ¼ teaspoon Clove
- ¼ teaspoon salt
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
Instructions
- Sift all the dry ingredients, and set them aside.2 cups All-purpose flour, 2 teaspoon Ginger, 1 teaspoon Cinnamon, ¼ teaspoon Clove, ¼ teaspoon salt, 1 teaspoon Baking powder, ½ teaspoon Baking soda
- Whisk two sugars and the oil, until smooth and well blended.1 cup Brown sugar, ¼ cup sugar, ¾ cup Oil
- Add in the egg and the vanilla extract and whisk vigorously.1 tablespoon Vanilla extract, 1 Egg
- Add in the molasses, and finish with adding the dry ingredients. DO NOT OVERMIX.⅓ cup Molasses
- Cover the dough and chill it for one hour,
- Preheat the oven to 350°F and line two baking sheets with parchment paper or silicon mat.
- Scoop the dough into the shape of small balls and place them on the lined baking sheets, Leave at least 2-inch space, These cookies will expand quite a bit.
- Bake for 10-12 minutes, or until the edges are set.
- Let cool down for 10 minutes, then transfer to the cooling rack.
