Are you looking for a cold dessert to cool you down on those hot summer days?! This no-bake strawberry-white chocolate cheesecake is your answer. This Cheesecake is very easy to make and uses the basic ingredients that a cheesecake requires. I am using fresh strawberries in this recipe to make it even more refreshing!
About This Strawberry White Chocolate Cheesecake
- This cheesecake does not require any baking. It is a perfectly delicious and refreshing summer treat.
- The ingredients are very basic, and no fancy ingredient is required.
- The use of White Chocolate adds that extra flavor to this Strawberry White Chocolate Cheesecake.
- The bottom crust contains Biscoff butter for additional flavor.
- Also, the fresh strawberries contribute to the cheesecake's freshness and flavor.
- To prepare the bottom crust, we also have the option of baking it for 10 minutes, but then it won't be quite a No-Bake dessert! However, if you prefer, that is okay.
How To Make This Recipe
- We start with melting the white chocolate in the microwave. because chocolate has to cool down before adding to the cheesecake.
- Do this in 20 sec. intervals and stir the chocolate in between. This will prevent the chocolate from seizing.
- Prepare the bottom crust by crushing the Biscoff cookies in a food processor. Add the melted butter and the Biscoff butter. Press this mixture to the bottom of the pan using a measuring cup. Place the pan in the fridge while you are working on the filling.

- Place the cream cheese in the food processor, and blitz until fully smooth and lump-free.
- Place the mixer's bowl and whisk attachment in the freezer to chill. We need them to be chilled for whipping the cream.
- Add in the sifted powdered sugar and mix.
- Mix in the melted chocolate and the vanilla extract, and process for a few seconds until combined.
- Transfer the mixture to the cold mixer's bowl, and add the whipping cream. Whisk until the mixture is stiff.
- you want to add the chopped strawberries at the end to save their shape and color.
- Pour this mixture over the cold bottom crust and chill for at least 5 hours before cutting.
- You can decorate the top with shaved white chocolate or whipped cream. It is optional.

Strawberry White Chocolate Cheesecake No-Bake

Ingredients
For The Cookie Base
- 2 cups Biscoff, Crushed- About 15 cookies
- ¼ cup Butter, Melted
- ¼ cup Biscoff butter
- ½ teaspoon Vanilla extract
For The Cheesecake
- 16 ounce Cream cheese, Room temperature
- 1 cup Powdered sugar, Sifted
- 1½ cups Heavy cream
- 1 tablespoon Vanilla extract
- 1 cup White chocolate, Melted
- 1½ cup Strawberries, Diced
Instructions
How To Make The Base
- Oil spray at the bottom of an 8-inch spring form pan, Set it aside.
- Melt the white chocolate on a double boiler or in the microwave at 20 Sec intervals. Mix in between. Set aside to cool down.1 cup White chocolate
- Crush the Biscoff cookies in the food processor until soft. Melt the butter in the microwave at 20-sec intervals, then add to the crushed crackers.2 cups Biscoff, ¼ cup Butter
- Place the Biscoff butter in a bowl and microwave it for 20-30 sec to liquidify and loosened up. Then add it to the crackers along with vanilla extract.¼ cup Biscoff butter, 1 tablespoon Vanilla extract
- The mixture should resemble wet sand. Using a measuring cup, press down this mixture to the bottom of the pan. Chill the pan until the filling is ready.
- Using a food processor, beat the room temperature cream cheese until smooth and lump-free. Putting the cream cheese out of the fridge a few hours before is recommended.16 ounce Cream cheese
- Add the sifted powdered sugar and the vanilla extract and mix until well combined and smooth.1 cup Powdered sugar, 1 tablespoon Vanilla extract
- Add in the melted white chocolate and mix.
- Pour the mixture into the bowl of the stand mixer and add in the heavy cream and mix until the mixture is stiff and does not fall from the spoon easily. If it is still soft, beat a little bit longer.1½ cups Heavy cream
- Gently fold in the diced strawberries and mix. DO NOT OVERMIX. You want the strawberries to hold their shape in the cheesecake.1½ cup Strawberries
- Pour the mixture over the chilled crust and place in the fridge for at least 5 hours or overnight.
- Decorate the top with whipped cream and whole strawberries.
