Hand pies or pocket pies are small pies that have the same crust recipe as a large pie or galette, made in a much smaller size that fits on the palm of your hand. This recipe is very easy to make and is super versatile to use in so many different recipes such as fruit pie or savory pie. These pies have delicious apple butter in the center.

- One thing to keep in mind to have a super flaky and light-crusted pie, is to have all the wet ingredients cold like ice.
- When the butter melts in the oven, creates those air pockets and flaky texture in the pie crust. Anything that comes in touch with the butter has to be ice cold and that is including a few spoons of water or Vodka!! oh, wait. Vodka?? The alcohol in vodka does not develop gluten as water does. So adding vodka adds liquid that helps to make the dough more workable and pliable without developing tougher gluten."
- These hand pies are filled with homemade Apple Butter, but you can use jams, Nutella, etc.
How To Make These Apple Butter Hand Pies
- We need a food processor to blitz the ingredients to have a homogenous mixture. Put the sugar, salt, and sugar in the food processor and bend.
- Add the ice-cold cubed butter and pulse ten times.
- In a small bowl mix the egg yolk, cold apple cider vinegar, and cold vodka. Add this mixture to the food processor mixture and blitz ten times.
- The mixture should look not too dry and not too doughy. When pressing the dough between your finger, should be able to form a ball.
- Dump the dough on the counter and roll a couple of times and make a ball out of the dough. Divide the dough into two disks. Wrap each in cling wrap and chill for one hour.
- Roll out each disk on a floured surface into ¼ inch thickness square. Cut the dough into smaller rectangles about 2 by 4 inches.
- Softly beat an egg and egg brush the pieces.
- Place 2-3 teaspoons of apple butter in the center of the half of the rectangles, Place the other half on top. Using a fork pinch all the edges by pressing the dough down to seal it all around. Make sure the dough is fully sealed otherwise the apple butter will ooze out while baking.
- Make a few holes on the top of the pie, and brush it with the egg. Bake and enjoy.
Disclaimer: I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.

Apple Butter Hand Pie

Ingredients
- 2½ cup All-purpose flour, Spooned and leveled
- 2 tablespoon Sugar
- ¼ teaspoon Salt
- 1 cup Butter, Cold and cubed
- 1 Egg yolk
- 2 tablespoon Apple cider vinegar, Cold
- 2-3 tablespoon Vodka, Cold
- 1 Egg, Lightly beaten for the top
- ½ cup Apple butter, See the notes
Instructions
- Place flour, salt, and sugar in the food processor and blitz a few times.2½ cup All-purpose flour, 2 tablespoon Sugar, ¼ teaspoon Salt
- Place the cubed butter in the freezer before using it. Add the cold butter to the flour mixture and pulse ten times.1 cup Butter
- In a small bowl mix the egg yolk, apple cider vinegar, and 2 tablespoons of the cold vodka. Then add to the food processor. Pulse for another ten times.1 Egg yolk, 2 tablespoon Apple cider vinegar, 2-3 tablespoon Vodka
- If the mixture looks too dry more cold vodka, one tablespoon at a time.
- Until the mixture holds together when pressed between your fingers. The mixture should not be too dry not too soft and sticky.
- Dump the mixture on a floured counter and knead a couple of times to gather it together. Be careful not to warm up the dough and the butter content.
- Divide the dough into two disks and wrap each disk in cling wrap and chill for one hour.
- Preheat the oven to 350°F. Roll out the dough on a floured surface and make a large square with ¼ inch thickness. Cut the dough into smaller 2X4 inches rectangles. Keep the other disk in the fridge until you use it.
- Lightly beat the egg, and egg-wash the pieces.1 Egg
- Place about two tablespoons of apple butter in the center of one piece of the dough. Place another rectangle on top of it, and press the edges down.
- Using a fork, pinch the two layers together by pressing on the edges. Seal the edges completely.
- Poke the fork on top of each pie to let the steam out when baking. Brush the top with the beaten egg. bake for 20-25 minutes, or until the top is golden.
Notes
You can use store-bought apple butter, but I recommend making homemade apple butter. Apple Butter.
