    These Brown Butter Marble Cookies are super easy to make and require no chilling time. They are absolutely gorgeous and crowd pleaser.

    About This Recipe

    • This cookie recipe is using brown butter which has a uniquely rich and nutty flavor. Brown butter is very easy to make and adds a ton of flavor to any recipe.
    • This recipe requires a couple of tablespoons of plain water! why? The reason is in the process of browning, butter loses some water to reach the browning point, and if no water substitutes for this loss, the cookies will be dry and crunchy. For each stick of butter (half a cup), we need to add 11/2 tablespoon water.

    • This Brown Butter Marble Cookie recipe has only one dough which will devide into two different color. It can't be easier than that.
    • We use both brown sugar and granulated sugar in this recipe. Brown sugar adds more moisture and a chewy texture.
    • One other ingredient that is worth mentioning is the egg yolk. Yolk creates bonding in the recipe as well as a soft texture.

    How To Make These Brown Butter Marble Cookies

    • Start with browning the butter. Place the butter in a saucepan with light color bottom, and cook the butter for about 7-10 minutes on medium heat. Butter starts to cook and foam up. The foam will go down and turns into a golden amber color. Then small brown specks start to form at the bottom of the pan. After this point keep an eye on the butter because it will burn very quickly.
    • Lower the heat and let it cook for one more minute. Remove the butter from the heat and let it cool down for five minutes.
    • Add the water and mix. Let the butter cool down then cream the butter with two sugars. Beat for two minutes.
    • Add the egg, yolk, and vanilla extract. Mix well.
    • It's time to add the dry ingredients and gently mix. Now we have a plain and light-colored dough.

    • Divide the dough into two equal balls. Add two tablespoons extra flour to the plain dough and mix. Also, add ¼ cup cocoa powder to the other half and mix. Now we have two different color dough.

    How To create the Marble Effect

    • Take a small amount of each dough. Press them together to have a thick disk. Picture #1
    • Cut this disc into two parts, Picture #2, and flip one part so the different colors are facing each other. Picture #3
    • Press them together and make a disk with two opposite colors. Picture #4
    • Cut the disc one more time, picture #5, and place these two pieces in a shape of a cross. Picture #6
    • Now roll this between your hands to form a ball.
    • Place them on a baking sheet and bake,

    It is possible to cut the disc one more time to have more marble effect.

    Ingredients
     

    • ½ cup Butter
    • 1¼ cup All-purpose flour, Spooned and leveled
    • ¾ teaspoon Baking powder
    • ¼ teaspoon Salt
    • ¼ cup Granulated sugar
    • ¾ cup Brown sugar, Light and packed
    • 1 Egg, Room temperature
    • 1 Egg yolk
    • 2 tablespoon Water
    • 1 tablespoon Vanilla extract

    For Marbleing

    • ¼ cup All-purpose flour, Spooned and leveled
    • ¼ cup Cocoa powder, Dutch-processed, Sifted

    Instructions
     

    • Preheat the oven to 350°F and line two baking sheets with parchment paper and set aside.
    • Mix all dry ingredients and set aside.
      1¼ cup All-purpose flour, ¾ teaspoon Baking powder, ¼ teaspoon Salt
    • Brown the butter by cooking the butter on medium heat until it is a golden color and small brown specks form. Set it aside to cool down and then add the water.
      ½ cup Butter, 2 tablespoon Water
    • Beat the brown butter with both sugars until well-mixed and fluffy.
      ¼ cup Granulated sugar, ¾ cup Brown sugar
    • Add the egg, yolk, and vanilla extract, and mix until eggs are well combined.
      1 Egg, 1 Egg yolk, 1 tablespoon Vanilla extract
    • Gently mix in the dry ingredients and form the dough. Do not overmix.

    Marbleing

    • Divide the dough into two equal parts. Add the ¼ cup flour to one portion and ¼ cup cocoa powder to the other half and mix.
      ¼ cup All-purpose flour, ¼ cup Cocoa powder
    • Take a small amount of each dough and press them together and make a disk. Tear this disk into two parts and flip one part and attach them again. Tear this disk again and repeat the above step one more time. Roll the dough in your hands. If the dough is sticking to your hands, wet your hands with a little bit of warm water.
    • Place the balls on the baking sheets, and bake for 13-15 minutes. They are done once the edges are set.
    • Let them cool down on the sheets for 10 minutes. then transfer them to the cooling rack.
