    Sugar cookies are the queen of all cookies in my opinion. They only use a handful of ingredients and can cut into so many different shapes and colors. These soft and tender Christmas Sugar Cookies are very delicious, easy to make, and decorate well for any occasion.

    About These Christmas Sugar Cookies

    • These cookies use very basic ingredients such as flour, sugar, butter, egg, and a small amount of baking powder for leavening!
    • This recipe is super versatile and can be cut into shapes that suit the season. They make beautiful heart-shaped cookies for valentine etc.
    • These cookies top with the well-known classic royal icing. Royal icing is very easy to make and can be colored in any possible color you would like.
    • I would use gel food coloring to tint the royal icing.
    • These cookies will look very pretty with different color sprinkles as well.
    • This recipe requires chilling, Chilling the cookie dough results in a crisp and clean cut. Since the butter content in the recipe hardens after chill time, the cookie cutter will make a sharper cut through the dough.

    How To Make These Cookies

    • Start with sifting the dry ingredients.
    • Beat the soft butter with sugar until the butter is very light and fluffy. This may take up to a few minutes.
    • Bring the speed down and add the eggs one at a time. If you are using vanilla extract or any other extract, add it now, and beat well.
    • Switch to a rubber spatula and fold in the dry ingredients. Mix until the flour is just blended and do not overmix. Overworking the dough can result in tough cookies.
    • Divide the dough into two disks, and wrap each disk in cling wrap, and chill for two hours. Do not skip this step.

    • After two hours, put the dough on the counter for 10 minutes. Lightly four a surface and roll out the dough to ¼ inch thickness.
    • Using a cookie cutter, cut the dough into the desired shapes and place them on the lined paper, and bake.
    • Let the cookies cool down completely before decorating.

    How To Make The Royal Icing

    • This simple royal icing has just two ingredients and a small amount of water,
    • Some royal icing recipes contain egg white, but I prefer not to use raw egg whites. Instead, I am using meringue powder. Meringue powder is a substitute for egg whites, and It's also used to stabilize frostings.
    • Mix the meringue powder, powdered sugar, and some warm water to reach the consistency of honey.
    • After the cookies are cool completely, dip the top surface into the icing. Set the cookies on the rack.
    • If you would like to tint the icing, add a few drops of gel food coloring now.
    • The icing will have some bubbles, use a pin to pop them.

    Ingredients
     

    For The Sugar Cookies

    • 3 cups All-purpose flour, Spooned and leveled
    • ½ teaspoon Baking powder
    • ½ teaspoon Salt
    • 1 cup Butter, Softened
    • 1½ cup Sugar
    • 1 Egg, Room temperature
    • ½ teaspoon Vanilla extract

    For The Royal Icing

    • 4 cups Powdered sugar, Sifted
    • 3 tablespoon Meringue powder
    • ⅓ cup Warm water
    • ½ teaspoon Vanilla extract

    Instructions
     

    • Sift the flour, baking powder, and salt. Set aside.

    • Using the paddle attachment beat the softened butter and sugar until light and fluffy.
      1 cup Butter, 1½ cup Sugar
    • Add the egg and vanilla extract, and beat well.
      1 Egg, ½ teaspoon Vanilla extract
    • Using a rubber spatula, fold in the dry ingredients, and mix until there are no streaks of flour are seen. Do Not Overmix.
    • Divide the dough in half and shape each part in a shape of a disk and wrap it in cling wrap and chill for at least two hours.
    • Preheat the oven to 350°F and line two baking sheets with parchment paper.
    • Roll out the dough to ¼ inch thickness. Use your Christmas cookie cutters and cut the cookies. Place them on the lined baking sheets and bake for 12-15 minutes. Let them cool down completely before decorating.

    How To Make The Icing

    • Mix the powdered sugar and meringue powder, then add the water one tablespoon at a time. add the vanilla extract too.
      4 cups Powdered sugar, 3 tablespoon Meringue powder, ⅓ cup Warm water, ½ teaspoon Vanilla extract
    • The mixture should have the consistency of honey. If it is too thick, add a little bit of water, and if it is too runny add more powdered sugar.
    • Add a couple of gel food coloring to tint the icing.
    • Dip the top of the cookie in the icing and place it on the cooling rack. Pop the bubbles in the icing.
    • Let the icing set and dry. It will take about half an hour.
