About This Recipe
- Gingerbread cookie recipes come in a few different kinds. The cookies could be crisp and crunch like the one I share here. They can also be soft and chewy, and the ones that we use to make gingerbread houses are quite hard, sturdy, and more structured.
- This cookie recipe is one of the easiest recipes that you can bake for the holidays. It has very simple ingredients and comes together very easily.
- Molasses is one of the main ingredients contributing to the warm amber colour in the Gingerbread Cookies. Molasses also add a ton of flavour and moisture to the cookies.
- These cookies contain a good amount of spices. Spices make these cookies more flavorful, delicious, and warm tasting.
- Because of the molasses content, this cookie dough requires chilling. We need to chill the dough for at least two hours.
- One great fact I really like about these cookies is that we can decorate them in endless designs. They look absolutely beautiful with the royal icing decorations.
How To Make The Gingerbread Cookies
- This recipe starts with creaming the butter and brown sugar for a good five minutes until light and fluffy.
- Next, we add in the molasses, egg, and vanilla extract. Beat until well blended.
- In a separate bowl, mix all dry ingredients, including the spices, and add this mixture to the butter mixture in three to four batches. Gently mix in the flour, and make sure not to overmix.
- Make the dough into the shape of two discs, wrap it in cling wrap, and chill for at least two hours.
- When you are ready to bake the cookies, leave the dough outside the fridge for 10-15 minutes.
- Lightly flour a clean surface and roll out the dough to ¼ inch thickness. Use your favourite gingerbread man cookie cutter to cut out the cookies.
- Please note the thinner the cut dough, the crunchier the cookies.
- If while working on the dough, it gets warm and too soft, Put it in the fridge for ten minutes and work on it again.
- Place the cookies on the lined baking sheet and bake.

Gingerbread Cookies

Ingredients
- 2⅓ cup+1tbsp All-purpose flour, Spooned and leveled
- ½ teaspoon Baking soda
- 1½ teaspoon Cinnamon
- 2 teaspoon Ginger
- ½ teaspoon Nutmeg, Preferably fresh
- ¼ teaspoon Clove
- ¼ teaspoon All spice
- ¼ teaspoon Salt
- ½ cup+1tbsp Dark brown sugar, Packed
- ½ cup Butter, Room temperature
- 1 Egg
- 1½ teaspoon vanilla extract
- ⅓ cup Molasses
Instructions
- Sift all the dry ingredients, and set them aside.2⅓ cup+1tbsp All-purpose flour, ½ teaspoon Baking soda, 1½ teaspoon Cinnamon, 2 teaspoon Ginger, ½ teaspoon Nutmeg, ¼ teaspoon Clove, ¼ teaspoon All spice, ¼ teaspoon Salt
- With the hand mixer or stand mixer beat the butter and the brown sugar for 5 minutes. The mixture will turn light and fluffy.½ cup+1tbsp Dark brown sugar, ½ cup Butter
- Add the egg and vanilla extract and mix well.1 Egg, 1½ teaspoon vanilla extract
- Next, add the molasses. The mixture will turn a dark caramel color.⅓ cup Molasses
- Switch to the spatula and fold in dry ingredients. Do not over-mix.
- Shape the dough into two discs and wrap them in the cling wrap and refrigerate for at least two hours.
- Leave the cold dough on the counter for 10 minutes. Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Roll the dough out to ¼ inch thickness. See the notes.Use your gingerbread man cookie cutter to cut the dough. If while working dough becomes too soft, put it in the fridge again for 10 more minutes.
- Place the cookies on the lined sheets and leave an inch of space between them and bake them for 8-10 minutes. Rotate the baking sheets halfway through the baking.
