About These Eggnog Cookies
- This recipe has a well-balanced spice flavor, just enough to indicate that warm spice taste. The main spice in these cookies is nutmeg, along with a touch of cinnamon and clove.
- I am using one tablespoon of rum in this recipe; however, you can substitute it with bourbon. The alcohol used in this recipe is very subtle and brings up that splash of alcohol flavor.
- This recipe calls for two egg yolks contributing to that soft and velvety texture.
- One other ingredient that is important in this recipe is brown sugar. Brown sugar contains a good amount of molasses which apart from its warm flavor, makes the baked goods very moist.
- Let's not forget about the eggnog. Eggnog is the main ingredient in this recipe to bring flavor and moisture to these cookies. Be sure to use regular eggnog and not low-fat.
- These Eggnog Cookies have a very velvety, soft, and chewy texture and freeze very well in the freezer for up to two weeks.
- You can top the cookies with an eggnog frosting or, just like these cookies, drizzle them with some melted chocolate.
- One amazing fact about this recipe is that the dough does not need to chill, and this will save you some time.
How To Make These Cookies
- We start by creaming the soft butter with two sugars, and take your time with this step and beat these ingredients for a good 3-5 minutes. The mixture should look light and fluffy.
- Next add in the egg yolks, vanilla extract, rum, or bourbon, and mix well.
- The liquidity for this recipe is coming from Eggnog. Now add in the Eggnog and mix until all blended.
- In a separate bowl whisk all the dry ingredients, switch to a rubber spatula add them to the butter mixture in two batches.
- This Eggnog Cookies dough does not need to chill, so scoop the dough into the shapes of a large walnut and place them on the lined baking sheets, and bake for 10-12 minutes or until the edges start to change to golden color.
- Melt half a cup of milk chocolate and drizzle over the cool cookies.
