    About These Red Velvet Stuffed Cookies

    • These cookies contain two parts; red velvet cookie dough, and cream cheese filling.
    • The ingredients for both parts are very basic and there is no fancy ingredient is required for these beautiful cookies!
    • Like any other red velvet recipe, this recipe calls for cocoa powder and gel red food coloring. Cocoa powder adds flavor and also enhances the red color.
    • We use both granulated sugar and brown sugar in this recipe. Brown sugar contains molasses and helps with extra moisture in the cookies.
    • There is one large egg to make bonding in the cookie dough. Egg works like glue in any recipe.
    • These Red Velvet Stuffed Cookies roll into granulated sugar for some extra crunch and crystal shine.

    • These Red Velvet Stuffed Cookies are stuffed with a creamy and delicious cream cheese mixture.
    • The stuffing contains simple ingredients such as cream cheese, powdered sugar, and vanilla extract. All we need to do is to mix all these ingredients into a soft and creamy mixture.

    How To Make These Cookies

    • Start with making the cream cheese stuffing by beating the softened cream cheese and powdered sugar. A few drops of vanilla extract will add more flavor.
    • Sift all the dry ingredients including cocoa powder. Sifting cocoa powder insures a lump-free mixture!
    • Beat the room-temperature butter with two sugars until fully combined and fluffy.
    • Next, add the egg and the red gel food coloring. Red Gel Food Coloring. The amount of food color depends on how red you would like these cookies to be.
    • At the end fold in the dry ingredients and mix. Wrap the dough in cling wrap and chill for half an hour.

    • Make small balls the size of a large walnut in the shell, of the chilled dough.
    • Press the ball in the center with your thumb and make a dentation. Then place a small amount of the cream cheese mixture in that dent.
    • Bring the sides of the cookie dough to the center to cover the cream cheese, and then roll the dough between your palms to make it into the shape of a ball again.
    • Roll each dough ball into granulated sugar and place them on the baking sheet and bake the cookies. These cookies will not expand too much, and just leave an inch between them. Bake and enjoy them!

    Ingredients
     

    For The Cookies

    • 1¼ cup All- purpose Flour, Spooned and leveled
    • 2 tablespoon Cocoa powder, Sifted
    • ½ teaspoon Baking powder
    • ¼ teaspoon Salt
    • ½ cup Butter, Room temperature
    • ½ cup+ extra for rolling Granulated sugar
    • ¼ cup Brown sugar, Packed
    • 1 Egg, Room temperature
    • 1 teaspoon Vanilla extract
    • 1 tablespoon Red gel food coloring

    For The Filling

    • ¾ cup Cream cheese, Room temperature
    • ½ cup Powdered sugar, Sifted
    • 1 teaspoon Vanilla extract

    Instructions
     

    How To Make The Cookie Dough

    • Sift all dry ingredients and set aside.
      1¼ cup All- purpose Flour, 2 tablespoon Cocoa powder, ½ teaspoon Baking powder, ¼ teaspoon Salt
    • Cream the butter with two sugars. Beat for 2-3 minutes.
      ½ cup Butter, ½ cup+ extra for rolling Granulated sugar, ¼ cup Brown sugar
    • Add in he egg, gel food coloring, and vanilla extract and mix well.
      1 Egg, 1 teaspoon Vanilla extract, 1 tablespoon Red gel food coloring
    • Use a spatula and fold in the dry ingredients, and gently mix. Cover the dough and chill for half an hour.

    How To Make The Filling

    • In the meantime make the filling. Beat the softened cream cheese with powdered sugar and vanilla extract. The mixture should be creamy and smooth.
      ¾ cup Cream cheese, ½ cup Powdered sugar, 1 teaspoon Vanilla extract

    How To Assmble

    • Preheat the oven to 350°F, and line two baking sheets with parchment paper. Set aside.
    • Make small balls the size of a large walnut in the shell. Make a dentation in the dough and place about half a teaspoon of the chilled filling in the dent, bring the sides over the filling, and roll the dough between your palms to make a ball again. Roll each ball in granulated sugar.
    • Place the balls on a lined baking sheet and bake for 15 minutes or until the top of the cookies start to crack.
    • Let cool down on the baking sheet for 10 minutes, the transfer to the cooling rack to cool down completely.
