    About These Linzer Cookies

    • These Linzer Cookies originated from Linz in Austria, and the original recipe was made as a tart. Over time the bakers started cutting the dough into different shapes and filling them up with some jam, then covering the top with another cut-out dough. This is how the Linzer cookies came to the bakery world.
    • This recipe calls for all-purpose and almond flour, making the cookie texture very light and tender.
    • Any delicious cookie recipe contains a good amount of butter. Butter gives the flavor and aroma of the cookies.
    • In this recipe, we use both powdered sugar and light brown sugar. Powdered sugar contributes to the soft texture, and brown sugar adds a ton of moisture to the cookies.
    • This recipe uses two egg yolks, which create bonding between all the ingredients.
    • We need to add a small amount of almond and vanilla extract to have a bakery-style flavor.
    • Linzer cookies have a jam in the center, which is totally up to you. I recommend thick jams to avoid juice running out of the cookie sandwich. If you like sour jam, use apricot, and if you want to keep it sweet, use raspberry or strawberry jam.

    How To Make These Cookies

    • Whisk all dry ingredients, including almond flour, all-purpose flour, and salt.
    • Cream the room-temperature butter with both sugars until light and fluffy. This may take a few minutes.
    • Add the egg yolks. One at a time, then add both extracts and mix well.
    • Switch to a rubber spatula and gradually add dry ingredients, and mix. The cookie dough will be crumbly, but mix until it holds together.
    • Divide the dough into two equal portions. Wrap the dough in cling wrap and chill for one hour.
    • Dust a clean surface with powdered sugar, and roll the dough to ¼ inch thickness.
    • Use a round cookie cutter and cut the cookies. Cut one portion of chilled dough with no hole in the center, and make the second half with the holes of your choice. You can go for many different designs, such as stars, hearts, circles, diamonds, etc.
    • Transfer the cookies to the lined baking sheet, chill for 15 minutes, and then bake them. Let them cool down completely.
    • Shake powdered sugar on the cookies that have the design in the center.
    • Place half a teaspoon of the jam in the center of the flat cookie, place the dusted cookie on top, and press slightly.

    Ingredients
     

    • 2 cups All-purpose flour, Spooned and leveled
    • 1 cup Almond flour
    • ¼ teaspoon Salt
    • 1 cup Butter, Room temperature
    • ½ cup Powdered sugar, Sifted
    • ⅓ cup Light Brown sugar, Packed
    • 1 tablespoon Vanilla extract, Preferably clear
    • ½ teaspoon Almond extract
    • 2 Egg yolks, Room temperature
    • ½ cup Jam, Thickened
    • ¼ cup Powdered sugar, For dusting

    Instructions
     

    • Sift both flours and salt. Set aside.
      2 cups All-purpose flour, 1 cup Almond flour, ¼ teaspoon Salt
    • Cream the butter with powdered sugar and the light brown sugar until light and creamy. Beat for a good 3-5 minutes.

    • Add the egg yolks one at a time, and mix well after each one.

    • Add both extracts, then switch to a rubber spatula and gradually fold in the flour mixture.
      1 tablespoon Vanilla extract, ½ teaspoon Almond extract
    • Mix until dough is formed. Divide the dough into two equal portions and wrap them in cling wrap. Chill the dough for at least one hour.
    • Dust the surface with powdered sugar and roll the dough to ¼ inch thickness.
    • Use your round cookie cutter to cut half of the dough into flat cookies and the other half with a designed hole in the center.
    • Transfer the cookies to the lined baking sheets. Chill them again for 15 minutes.
    • Preheat the oven to 350°F, and line two baking sheets with parchment paper.
    • Bake the cookies for 8-10 minutes. Let them cool down for 10 minutes, then transfer them to the cooling rack to cool down completely.
    • Shake some powdered sugar over the cookies that have a design in the center.
      ¼ cup Powdered sugar
    • Place ½ teaspoon of the thickened jam in the center of the flat cookie, and place the dusted cookie on top and press slightly.
