About This Tiramisu Cake
- This Nescafe cake recipe is super moist and fluffy and can be a delicious coffee cake alone. The original Tiramisu cake uses a sponge cake for the cake part, but I wanted to twist this Tiramisu cake recipe.
- The Mascarpone cheese is the signature ingredient in any Tiramisu recipe, and it combines with a sort of cream to make that creamy and delicate layer of Tiramisu. Instead, I used an egg yolk pastry cream with a custard consistency.
- This cream recipe will make you happy when you have yolk leftover from a baking project, such as Swiss Meringue Buttercream. This recipe needs six egg yolks.
- The famous flavour of this decadent dessert comes from the combination of coffee and cocoa powder. The cake layers are brushed with strong brewed coffee, and there is a generous amount of cocoa powder between the layers.
- This dessert needs to chill for a few hours before serving.
How To Make The Tiramisu Cake
How To Make The Cake Layers;
- This cake recipe uses three eggs and 1-½ cups of sugar. Mix these two ingredients well until the mixture is light and pale.
- Next, add the oil and mix, followed by the sour cream, applesauce, and vanilla extract. Applesauce creates a moist and tender crumb.
- Ultimately, sift all the dry ingredients, including flour, baking powder, Espresso powder, and salt and add to the mixture.
- Gently mix the mixture, and DO NOT OVERMIX.
- This cake recipe is enough for two 6-inch pans, and that is what you see in this post. Bake the cake layers for 30-35 minutes, and let them cool down before frosting.
How To Make The Mascarpone Cream;
- They say; yolks do not need to pasteurize, unlike egg whites, but I consulted an Italian friend of mine, Anna, who makes Tiramisu often. She taught me a method in which we cook the yolks indirectly.
- In this method, we beat the egg yolks for 10 minutes until light, fluffy and double in size.
- Then, boil the sugar and water to make syrup, and while the yolks are beating, stream the syrup into the mixer bowl and keep beating until the mixture cools down. The heat from the syrup cooks the egg yolk.
- In a separate bowl, soften the mascarpone cheese until it is lump-free and smooth. I recommend putting the cheese out of the fridge several hours before.
- Add the cheese to the yolk mixture and mix well, then add the vanilla extract.
How To Assemble The Tiramisu Cake
- Place the first cake layer on the base turntable, brush it with the brewed coffee, and ensure it is not hot.
- Cover the cake with a generous amount of cream, then sift a good amount of cocoa powder over the cream, and repeat these steps until you place the third cake layer. Cover the entire cake with mascarpone cream, and top the cake with a generous amount of dusting cocoa powder.
- If you have leftover cream, pipe it on the cake and finish with more cocoa powder.
- Leave the cake in the fridge for 2-3 hours before serving.

Ingredients
For The Cake
- 2 cups All-purpose flour, Spooned and levelled
- 2 teaspoon Baking powder
- ½ teaspoon Salt
- 1 tablespoon Espresso powder
- 3 Eggs, Room temperature
- 1½ cups Sugar
- ½ cup oil
- ½ cup Sour cream, Room temperature
- ½ cup Applesauce, Room temperature
- 1 tablespoon Vanilla extract
For The Mascarpone Cream
- 6 Yolks
- ¾ cup Sugar
- ¼ cup Water
- 1 tablespoon Vanilla extract
- 500 grams Mascarpone cheese, Room temperature
- ½ cup Brewed Coffee, For soaking the cake layers
- ½ cup Cocoa powder, For dusting
Instructions
How To Make The Cake
- Preheat the oven to 350℉, and grease and line two 6-inch pans with parchment paper.
- Whisk all dry ingredients and set aside.2 cups All-purpose flour, 2 teaspoon Baking powder, ½ teaspoon Salt, 1 tablespoon Espresso powder
- Use the whisk attachment to whisk the eggs and sugar for a few minutes until the mixture is creamy and light.3 Eggs, 1½ cups Sugar
- Add the oil and applesauce and mix well.½ cup oil, ½ cup Applesauce
- Next, add the sour cream and vanilla extract and mix well.½ cup Sour cream, 1 tablespoon Vanilla extract
- Add in the dry ingredients and gently mix. Do not overmix.
- Pour the batter into the prepared pans and bake for 30-35 minutes. Let cool down in the pan for 10 minutes, then transfer to a cooling rack to cool down completely.
How To Make The Cream
- Pour the water and sugar into a saucepan and bring to a boil. Bring the heat down and let simmer for a few minutes.¾ cup Sugar, ¼ cup Water
- Whisk the egg yolks and vanilla extract for 5 minutes until they are pale, light and creamy.6 Yolks, 1 tablespoon Vanilla extract
- While the yolks are whisking, stream the hot syrup on the side of the bowl and keep whisking until the bowl cools down. This may take up to 7-10 minutes.
- In a separate bowl, soften the Mascarpone cheese until it is lump-free and smooth. Add the cheese to the yolk mixture and mix well.500 grams Mascarpone cheese
How To Assemble
- Place the first cake layer on the base turntable, brush it with the brewed coffee, and ensure it is not hot. Cover the cake with a generous amount of cream, then sift a good amount of cocoa powder over the cream.½ cup Brewed Coffee, ½ cup Cocoa powder
