Blondies are the blond and light version of brownies! Brownies contain a substantial amount of cocoa powder or chocolate. Although blondies don't have any cocoa or chocolate, they use some nuts or white chocolate instead. These decadent Pecan Blondies are buttery, soft, chewy, and packed with toasted pecans.

- This recipe has simple ingredients:
- Butter- Let's talk about the butter for a moment. One of the reasons these pecan blondies are so delicious and aromatic is the brown butter! Yes, we brown the butter before we start the baking process. Browning butter is a process in which we cook the butter until all the fat content of the butter is evaporated, and the fat content starts to brown. Butter is ready when we see small brown specks at the bottom of the pan containing the fat content. Keep an eye on the butter because it burns very quickly. Remove it from the heat when it is golden.
- Sugar- This recipe uses both granulated and brown sugar. Brown sugar contains molasses which gives a warm caramel flavour to the recipe, and it also makes the blondies soft and moist.
- Eggs & Yolk- We need two eggs and one yolk. Eggs structure the recipe, and the yolk adds to the chewiness of different recipes, such as cookie recipes.
- Vanilla extract- For the flavour and aroma.
- Flour- Well, the Flour in this recipe deserves some attention. This recipe calls for all-purpose and whole wheat flour. Whole wheat flour contains more protein than AP flour, adding to the Pecan Blondies' chewiness.
- Cornstarch- This ingredient plays a big role in the texture of the baked item. Cornstarch creates a velvety and tender texture in the recipe.
- Baking Powder & Salt- We use Baking powder as a leavener, and salt enhances other flavours.
- Cinnamon- Cinnamon pairs really well with brown butter and adds a kick of flavour.
- Nuts- Blondies complete when they contain that extra crunch from some nuts, and since I love pecans, I added one cup of chopped pecans. Make sure always roast the nuts before adding them to the recipe.
- White Chocolate- Add half a cup of white chocolate chips or chunks to the batter. Optional.
How To Make These Pecan Blondies
- Brown the butter and set aside to cool down.
- Beat the eggs, yolk, vanilla, and sugars until light and creamy. Take your time at this step because this will contribute to the shiny, cracked blondie top.
- Add the brown butter and mix well.
- Sift the flour, cornstarch, cinnamon, and salt and add to the above mixture. Gently mix, and do not overmix.
- In the end, add the nuts and chocolate chip, if using, and mix.
- Spread the batter in the lined pan and spread some chopped nuts all over the batter. Bake for 20-30 minutes.
- Let the Pecan Blondies cool down in the pan completely, then transfer them to the cooling rack.

Ingredients
- 1 cup Butter, Browned
- 1 cup Brown sugar, Lightly packed
- ½ cup Granulated sugar
- 2 Eggs, Room Temperature
- 1 Yolk, Room Temperature
- 1 tablespoon Vanilla extract
- 1 cup All-purpose flour, Spooned and levelled
- ½ cup Whole wheat flour, Spooned and levelled
- 1 tablespoon Cornstarch
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- ¼ teaspoon Salt
- 1 cup Pecans, Toasted and chopped
- ½ cup White chocolate chips, Optional
Instructions
- Preheat the oven to 325℉, and line an 8X8-inch brownie pan with parchment paper. Set aside.
- Brown the butter and let it cool down.1 cup Butter
- Sift all dry ingredients and set aside.1 cup All-purpose flour, ½ cup Whole wheat flour, 1 tablespoon Cornstarch, 1 teaspoon Baking Powder, 1 teaspoon Cinnamon, ¼ teaspoon Salt
- Use the whisk attachment to mix sugars, eggs, yolk, and vanilla extract until light and silky.1 cup Brown sugar, ½ cup Granulated sugar, 2 Eggs, 1 Yolk, 1 tablespoon Vanilla extract
- Add the brown butter and mix well.
- Add the dry ingredients and gently fold until no trace of flour is seen.
- Add the pecans and white chocolate chips, and mix.1 cup Pecans, ½ cup White chocolate chips
- Spread the batter into the lined pan and sprinkle some chopped pecan on top. Bake for 25-30.
- Let the blondie cool in the pan for one hour, then transfer to the cooling rack. Make sure it is completely cooled down before cutting.
