About These Melting Snowman Cookies
- These Melting Snowman Cookies have the basic cut-out cookie dough that requires no chilling time! And come together in no time.
- I used plain cookie dough here, but you can make these cookies on chocolate cut-outs or Chocolate Shortbread cookies.
- For the snowman head, I am using a large marshmallow cut in half; however, if you want to add more flavour, you can use a Reese's Cup. This will add more flavour and texture to the cookies.
- Different options exist to create the melting effect, as this recipe uses icing sugar, but melting white chocolate works well. I like icing sugar better because it runs over the marshmallow smoothly and evenly.
- The list of ingredients is simple, and no fancy ingredient is required. To make these Melting Snowman Cookies, we need Butter, Granulated sugar, All-purpose Flour, Baking powder, Salt, Vanilla Extract, Almond Extract, Egg, and Cinnamon.
- Why Cinnamon? I am adding a small amount of Cinnamon to give these cookies an extra warm flavour to go with the season.
Cookie Icing
The icing is simple and basic. We only need Powdered Sugar, Milk, and a touch of Vanilla Extract. Powdered sugar contains cornstarch, and this may affect the icing's consistency. To have the perfect consistency, if the icing is too runny, add some powdered sugar; if it is too stiff, add some milk. The icing should be pourable but not too runny to decorate these Melting Snowman Cookies and stay on the marshmallow and sugar.
Decorations
- When it comes to decorating these Melting Snowman Cookies, let your creation go wild. You can use sprinkles for the snowman face or tint the icing in black for the eyes. Again, I am using an orange sprinkle for the nose, but orange icing works well.
- You can use a mini Rees's Cup as a hat and add buttons with mini M&Ms.
How To Make These Melting Snowman Cookies
- Using the paddle attachment, beat the room-temperature butter and sugar for 2-3 minutes until the mixture is fluffy and pale.
- Add in the egg, vanilla and almond extract, and mix well.
- In a separate bowl, sift the AP flour, Cinnamon, baking powder, and salt and add it to the butter mixture in two additions. Mix all together, but do not overmix.
- Lightly flour a clean surface and roll out the cookie dough to ¼ inch thickness.
- Use a medium-sized round cookie cutter, 2-inch, to cut the cookies.
- Place them on a lined baking sheet and bake them for 8-10 minutes. Cookies are done when the edges are set and slightly golden.
- Let the cookies cool down on the baking sheet for 10 minutes, and then transfer them to the cooling rack to cool down completely.
- Cut the large marshmallow in half, place one half on the cookie, and try not to put it in the center to leave some space for the icing to run and flow.
- Make the icing, pour one tablespoon over the marshmallow, and direct it to the sides.
- Add the mini Rees's Cup, sprinkles for the eyes, buttons, etc.
- Let the icing set and harden for about one hour.
