- This recipe uses both Granulated and Brown sugar, as brown sugar adds a ton of flavour and moisture to this Chocolate Fudge Cake.
- The Chocolate flavour comes from a good quality Cocoa Powder. Invest in a high-quality Cocoa powder; I promise you will not regret it.
- Sour cream is an essential ingredient that plays a big role in the texture of this fudgy cake. Sour cream is not only a source of fat, but also, due to its acidity, it contributes to the fluffy texture.
- Oil is the other ingredient that keeps the cake moist for a longer time.
- Each cake should have a liquid of some sort, and it could be milk, orange juice, etc. Like so many other chocolate cake recipes, this Chocolate Fudge Cake uses brewed coffee. Coffee aroma enhances the cocoa flavour.

How To Make The Chocolate Fudge Cake
The Chocolate Cake;
- Preparing the Chocolate Fudge Cake is easy; you only need two mixing bowls.
- Sift all dry ingredients, including both sugars.
- Melt the butter and whisk all the wet ingredients except the hot coffee in another bowl and add them to the dry ingredients.
- Add the eggs one at a time and mix after each one. Gently mix all the ingredients and make sure to scrape the bottom of the bowl.
- At the end, add the brewed hot coffee and gently mix. Do not overmix.
- Divide the batter between two 8-inch or three 6-inch pans and bake for 30 to 35 minutes. Let the cake layers cool down before frosting.
The Chocolate Fudge Frosting;
- Make the chocolate ganache by melting the chocolate in steaming hot heavy cream. Let the chocolate sit in the hot cream for five minutes, then stir the mixture until the chocolate is melted and the mixture is smooth and shiny.
- Pour the mixture into the stand mixer bowl, then mix in the brown sugar, melted butter, cocoa powder, vanilla extract and sour cream.
- Place the bowl in the fridge for 15-30 minutes. Different kinds of chocolate react differently in the fridge. The mixture should become thicker and have the consistency of Greek yogurt. Check the mixture after 15 minutes, and if it is still runny, place it back in the fridge for another five minutes.
- Place the bowl under the whisk attachment and whisk it until it is thick and spreadable.
- Frost the cake layers; know that this frosting will become thicker as it sets.
