These Simple Red Velvet Chocolate Truffles are a bite-sized, decadent, and delicious treat that can be adapted to many variations. I was preparing my recipes for Valentine's and used the red velvet cake in the center. Still, you can make them with a chocolate center and white chocolate cover or roll them in any sprinkles to make them suitable for any occasion.
What is a Truffle? A chocolate truffle is a French chocolate confectionery traditionally made with a chocolate ganache center and coated in cocoa powder, coconut, or chopped nuts. A chocolate truffle is hand-rolled into a spherical or ball shape. Wikipedia

About These Simple Red Velvet Chocolate Truffles
- To make the Red Velvet center, you have a couple of options: I am using Betty Crocker Super Moist Red Velvet Cake Mix; however, you can make my Red Velvet Bundt Cake and use the crumbs to make These Simple Red Velvet Chocolate Truffles.
- We need an ingredient to make the cake crumbs stick together and soft enough to shape them into little balls. I am using Cream Cheese to offset the sweetness of the Red Velvet Cake and the Chocolate Coating. You can also use Swiss Meringue Buttercream or any other buttercream.
- The other components are Dark and Semi-sweet Chocolate for the coating.
- You can substitute the dark chocolate with White Chocolate, but I like the taste of Dark chocolate better.
- The options for decoration are endless. I melted Milk Chocolate over the Dark Chocolate; sprinkles, crushed nuts, or coarse sugar are the other options.
How To Make Them
- Make the Red Velvet Cake, either the Red Velvet Bundt Cake or the Betty Crocker Cake Mix.
- Use your fingertips or the food processor to smash the cake into fine crumbs. If using the food processor, blitz the cake just a few times for consistency. Do not process too long, or your cake will become a paste.
- Use the paddle attachment to soften the room-temperature cream cheese, then add the cake crumbs and vanilla extract. Mix everything until you have a consistent and cohesive red dough.
- Use an ice cream scoop to make small balls the size of a large walnut, about 30 grams each. Place them on a tray and chill them in the fridge for one hour.
- Melt the dark chocolate in the double boiler or microwave at 20-second intervals, stirring after each time.
- Be sure to use chocolate bars and NOT chocolate chips.
- Use a fork to lift each ball and dip it in the melted chocolate. Transfer the ball to a cooling rack to drip the excess chocolate. Let the coating set for about half an hour.
- Melt the milk chocolate, white chocolate, or any colour contrasting with dark chocolate. Pour it into a plastic bag and nip the end. Run it over the chocolate balls to create the lines. You can use white chocolate or any chocolate that contrasts with dark chocolate to make lines more visible.
- Let the chocolate lines set and harden, then serve and enjoy 🙂
Storing: These Truffles stay fresh in an air-tight bag at room temperature for a few days.
Disclaimer: I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.
