About These Gluten-Free Chocolate Chip Cookies
- One of the significant advantages of making these cookies is that you do not need to buy expensive gluten-free flour.
- This flour blend combines 1) Rice Flour, 2) Potato Starch, 3) Corn Flour, and xanthan gum.
- I used this Xanthan gum to create bonding in a gluten-free recipe.
- Note: Corn Flour is different from Cornstarch.
- Make this flour blend and store it in the fridge for when your recipe calls for it.
- These cookies are soft and chewy, and you can hardly say that they have no all-purpose.
- We also need; Baking soda, Salt, Butter, Brown and Granulated Sugar, Eggs, Vanilla Extract, and Chocolate Chips.
- The cookie dough requires some chilling time to prevent the cookies from spreading too much.
How To Make These Cookies
- Make the gluten-free flour blend in advance. Sift the required amount with baking soda, and salt and set aside.
- Beat the butter with sugars in a large bowl until they are well incorporated.
- Add the eggs and vanilla extract and mix well.
- Add the dry ingredients in three stages and gently fold, but do not overmix.
- Lastly, mix in the chocolate chips.
- Cover the dough and chill it for one hour.
- Preheat the oven to 350F. Use an ice cream scoop to scoop the dough onto a lined baking sheet. Leave at least 2 inches between the cookie balls. Place a few more chocolate chips on each cookie ball and bake for 10 to 12 minutes.
- Cookies are done when the edges look set, and the cookies look slightly golden.
- Immediately after removing the cookies from the oven, go around their edges with a round cookie cutter or the back of a spoon to round them back in shape.
- Let them cool down on the baking sheet for 10 minutes, and then transfer them to a cooling rack to cool completely.

Storing: Keep these cookies in an air-tight container at room temperature for one week and freeze them for two months.

For The Gluten-free Flour
- 3 cups Rice flour, Fine and white
- 2 cups Potato starch
- 1⅓ cup Corn flour, Not cornstarch
- 1 tablespoon Xanthan gum
For The Cookies
- 2¾ cups Gluten-free flour, See the above recipe
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Butter, Room temperature
- ¾ cup Brown sugar
- ½ cup Granulated sugar
- 2 Eggs, Room temperature
- 1 teaspoon Vanilla extract
- 1½ cup Chocolate chips
