Banana bread or loaf is one of the most classic and favourite home baking. As long as I can remember, my mom and grandma always made this as a quick mid-day snack for us to take to school. Every classic deserves a little bit of tweaks and modifications. This delicious Banana Walnut Loaf is a classic recipe with a slight difference. I have incorporated some walnuts and brown sugar for additional flavour and moisture.

- This Banana Walnut Loaf recipe is the classic banana bread with a slight change in the sweetener and the added nuts, in this case, Walnuts and Pepitas.
- There are both granulated and brown sugar in this recipe.
- The additional nuts are totally optional but recommended. Nuts add texture, flavour and volume to the bread. I used Walnuts; however, pecans are fine too!
- The other ingredients are simple and basic, no fancy ones 😉 The list goes as follows: All-purpose flour, Baking Soda and Powder, Cinnamon, Granulated and Brown sugar, Eggs, Sour cream, Butter, Oil, and obviously Bananas.
- We use both Butter and Oil in this recipe. Butter brings a ton of buttery flavour, and Oil keeps the crumb moist and soft.
- All-purpose flour is the base of this cake to create volume and stability.
- Baking Soda and Powder are leaveners, which make the loaf rise and fluff up.
- Eggs bind the ingredients together and work as a leavener also.
- This recipe calls for both granulated and brown sugar. Brown sugar has a molasses base, which gives this loaf a ton of caramel flavour and also moistens the crumb.
- I LOVE Vanilla Extract. See this post on how to make your own. In my opinion, a baked good is a piece of rock without vanilla extract.
- This recipe uses Cinnamon to bring a warmer flavour and aroma, and it goes really well with maple syrup and walnuts.
- What is a Banana Walnut Loaf without Bananas? Make sure to use the ripe bananas with a few black spots. The more ripe bananas, the sweeter and flavourful the bread will be.
How To Make The Banana Walnut Loaf
- Preparing this recipe cannot be easier. Sift all dry ingredients together and set aside.
- Beat the butter and both sugars.
- Add in the oil and sour cream and mix well.
- Add in the eggs and vanilla extract and mix until smooth and well blended.
- Add the mashed bananas and mix well.
- Switch to a rubber spatula and fold in the dry ingredients. Gently mix until there is no streak of dry ingredients left.
- At the end, add the chopped walnuts and pepitas and gently mix.
- This Banana Maple Loaf is baked in a 9X5-inch loaf pan. Make sure to grease the pan with butter well.
- Pour the batter into the pan and cover the top with crushed Walnut and Pepitas. Press the topping down gently.
- Bake the loaf for 50-55 minutes or until an insert comes out clean.
- Let the loaf cool down in the pan for 15 minutes, then transfer it to the cooling rack to cool down fully.

Ingredients
For The Loaf
- 1½ cup All-purpose flour, Spooned and levelled
- 1 teaspoon Baking soda
- ½ cup Baking powder
- 1 teaspoon Cinnamon
- ½ teaspoon Salt
- ½ cup Butter, Room temperature
- ¾ cup Granulated sugar
- ¼ cup Brown sugar, Lightly packed
- ¼ cup Oil
- 2 Eggs, Room temperature
- 1 tablespoon Vanilla extract
- ¼ cup Sour cream, Room temperature
- 1½ cup Mashed bananas, About 2-3 bananas- See notes
- 1 cup Walnuts, Roughly chopped
- ¼ cup Pepitas seed
For The Topping
- ¼ cup Walnuts, Finely chopped
- 1 tablespoon Pepitas seed
Instructions
- Preheat the oven to 350℉, and butter a 9X5 inch loaf pan. Set aside.
- Spread the walnuts on a baking sheet and roast for 10 minutes. Keep an eye on them because they burn quickly.1 cup Walnuts
- Mix all dry ingredients and set aside.1½ cup All-purpose flour, 1 teaspoon Baking soda, 1 teaspoon Cinnamon, ½ teaspoon Salt, ½ cup Baking powder
- Use the paddle attachment and beat the butter and both sugars until creamy and smooth.½ cup Butter, ¼ cup Brown sugar, ¾ cup Granulated sugar
- Add in the oil and mix.¼ cup Oil
- Add the eggs and vanilla extract and mix well.2 Eggs, 1 tablespoon Vanilla extract
- Add in the sour cream and mix well.¼ cup Sour cream
- Add the mashed bananas and mix well.1½ cup Mashed bananas
- Switch to a rubber spatula and fold in the dry ingredients in three passes. Gently mix and stop mixing when there is no trace of dry ingredients left.
- Lastly, mix in the chopped and roasted walnuts and pepitas.1 cup Walnuts, ¼ cup Pepitas seed
- Pour the batter into the greased pan, spread the chopped walnuts and pepitas over the top and gently press them down.¼ cup Walnuts, 1 tablespoon Pepitas seed
- Bake the loaf in the preheated oven for 50-55 minutes or until an insert comes out clean.
- Let the loaf sit in the pan for 10 minutes, then remove it from the pan and let cool down on a cooling rack.
Notes
- Use fully ripe bananas with black spots. The riper the bananas, the sweeter and more flavourful they are.
