About This Recipe
- These cookies are elementary to make despite their sophisticated look.
- This recipe has two parts. 1) The cookie dough and 2) The Apple Pie Filling.
- One great thing about this recipe is that the cookie dough does not require chilling time. How great is that! 🙂
- The ingredients for both pars are easy to prepare and very non-fancy 😉

- The Cookie dough recipe has a list of ingredients as follows: All-Purpose Flour, Baking Powder, Apple Pie Spice, Butter, Dark Brown Sugar, Egg, Yolk, and Vanilla extract.
- Baking powder is a leavening ingredient that makes the cookies rise.
- What I would like to talk about a bit is the Apple Pie Spice. This spice blend is listed in this post: Spice Blends. Having your own blends ready to go is very convenient and makes the baking process easy.
- I would recommend using Dark Brown Sugar for a deeper colour and flavour. The molasses content in dark brown sugar is higher than that in light brown sugar, creating a deeper colour in the cookies.
- This recipe calls for both Egg and Yolk. Egg creates bonding in the recipe, and the Yolk makes the cookie texture extra moist and soft.
- A dash of Vanilla extract makes everything extra delicious and fragrant!
- These cookies are rolled into a cinnamon sugar mixture before filling up with the apple pie filling!
How To Make These Apple Pie Cookies
- Make the Apple Pie Filling first and let it cool down completely. Get the recipe here: Apple Hand Pie.
- Preheat your oven to 350F, and line two baking sheets with parchment paper or BAKING MAT.
- For the cookie dough, using the paddle attachment, beat the room-temperature butter and dark brown sugar for a couple of minutes until the mixture is lighter in colour and fluffy.
- Add in the egg, vanilla extract, and yolk and mix well.
- Switch to a rubber spatula, and gently fold the dry ingredients into the butter mixture. Stop mixing when there is no trace of dry ingredients,
- Scoop about one and a half tablespoons of the dough into the palm of your hand and make a ball. Roll each ball into the cinnamon sugar.
- Use a round teaspoon and make an indent in each ball.
- Fill each indent with about one teaspoon of the apple pie filling.
- Bake the cookies for 8-10 minutes. Cookies are done when their edges are set and the filling looks cooked and set on the edges.
- Let them cool down on the baking sheet for 10 minutes, then transfer them to the cooling rack to cool down completely.

Ingredients
- ¾ cup Apple Pie Filling, See Notes
For The Cookies
- 2½ cup All-purpose flour, Spooned and levelled
- 1 teaspoon Baking powder
- ¼ teaspoon Salt
- 1½ teaspoon Apple Pie Spice, See notes
- 1 cup Butter, Room temperature
- ½ cup Dark brown sugar, Packed
- 1 Egg, Room temperature
- 1 Egg yolk, Room temperature
- 1 teaspoon Vanilla extract
For Rolling
- ½ cup Granulated sugar
- 1½ teaspoon Cinnamon
Instructions
