This Delicious, decadent, refreshing, and no-bake Lemon Tiramisu is a must-try dessert all year round, especially in the summer.
This Delicious, decadent, and refreshing Lemon Tiramisu is a no-bake and a must-try dessert. Lemon is one of the best fruits, or citrus, to be exact, that you can use in your desserts such as Lemon Meringue Tart, Lemon Poppy Seed Sheet cake, Moist Lemon Bundt Cake, and the list can go on!
About This Lemon Tiramisu
- Despite its sophisticated look, this dessert is easy to make so you can show it off at home parties.
- This recipe has a few separate layers, which you can prepare beforehand.
- Let's talk about its different components: The main component that gives this dessert its vibrant colour is the Rich & Creamy Lemon Curd
Lemon Curd;
- One of the main parts of this delicious recipe is the Lemon Curd. In this recipe, I show you how to prepare a lush and creamy lemon curd that can be used in many other recipes, such as No Chill Lemon Curd Cookies. You can also use store-bought lemon curd.
Cream filling;
- This filling is just like any other tiramisu recipe; it requires Mascarpone Cheese, Heavy Cream, Sugar, vanilla extract, as well as Lemon Juice, and zest.
Lady Fingers
- And what is a tiramisu without Lady Finger Cookies? These cookies are easily accessible, and once they soak in the soaking syrup, they become soft and velvety.
Soaking Syrup
- The cookies should soak in some syrup, and in this Lemon Tiramisu, we need to soak them in a lemon-infused liquid. There are a few options for soaking syrup. What I prefer to make is homemade Limoncello. Limoncello is an Italian Lemon liquor that is available in liquor stores. However, you can make it at home easily. Peel five to six lemons and try not to get the piths. Place the peels in a glass jar with a tight lid like this one. Add one cup of granulated sugar, and fill the jar with Vodka. Close the lid and store the jar in a dark place for at least two weeks. Shake the jar every once in a while. The Limoncello is ready after two weeks. You can also simply buy a Limoncello bottle from your liquor store.
- We also need some Simple Syrup for soaking cookies. Mix one cup of granulated sugar with one cup of water. Bring the mixture to a boil and let it simmer for ten minutes. Let the syrup cool down, pour it into a clean jar and keep it in the fridge.
How To Make This Recipe
- First, make the lemon curd and Limoncello (If you are making it).
- Leave the Mascarpone cheese out of the fridge beforehand to come to room temperature.
- Mix the cheese, heavy cream, vanilla extract, and sugar with whisk attachment.
- Add in the lemon juice, and zest and mix well.
- I added ⅓ cup of lemon curd to the cream filling to enhance the lemon flavour all through this Lemon Tiramisu.
- Beat the mixture until stiff picks form.
- Mix the Limoncello, simple syrup, and heavy cream separately. Lightly soak one side of the lady finger cookies in the syrup and arrange one layer of the cookies at the bottom of a 13X 9-inch casserole dish. Important Note: Do not oversoak the ladyfingers in the syrup. Oversoaking them will make them too soft and soggy.
- Cover the top of the cookies with cream filling and smooth it out with an offset spatula.
- Drop dollops of lemon curd over the cream filling.
- Place the second layer of the soaked cookies over the dish.
- Cover the top with another layer of cream filling and smooth it out.
- Cover the top of the tiramisu with cling wrap and refrigerate it for 4 to 5 hours or overnight.
- Before serving, spread a layer of lemon curd over the tiramisu.
- You can decorate the top with lemon slices and pipping cream.
