Decadent, rich, and creamy Brownie- Cheesecake bars
If you are like me, and cannot decide between a brownie or a cheesecake, then stop right here! These brownie cheesecake bars are super rich and creamy. If you are planning to make a decadent dessert for a special occasion, this recipe is for you.
About This Recipe
- As the name indicates, this recipe is a combination of a rich, fudgy brownie and a creamy, decadent cheesecake!
- We are making the brownie dough first and putting it aside until the cheesecake batter is ready, then we bake them both together.
- This recipe may sound a bit difficult to make, but the truth is the prep time is not more than 20 minutes. The bake time is as much as we bake a pan of brownies.
- The other interesting point is, this recipe does not require a water bath for the cheesecake to process.
How To Make The Rich Brownie Cheesecake Bars
- Grease and line an 8X8 brownie pan with parchment paper. Set aside.
- We start with melting the butter, then add the chocolate chips. Be sure the chips are completely melted and smooth.
- Then we need to add the cocoa powder. This is what I used Baking Powder. Cocoa powder needs to rest for a few minutes to fully activate and bloom.
Let's Keep Going
- Now it's time to incorporate the sugar and the egg. We need both granulated sugar and brown sugar to have the caramel flavor and moisture from the brown sugar. We need sugar in our brownie 🙂 Beat the eggs into the sugars, one at a time. Egg yolk and vanilla extract are added last.
- Add the egg mixture to the chocolate mixture and mix well.
- In a separate bowl, whisk flour, salt, and coffee powder. Add this mixture to the chocolate mixture and gently fold in. DO NOT OVERMIX. Pour the brownie batter minus ½ cup, into the prepared pan. Set aside and start making the cheesecake batter.
- It is very important to leave the cream cheese out of the fridge a few hours before. Cream cheese has to be at room temperature. Place the cream cheese in the food processor, add the sugar, and process for a few minutes, until the mixture is smooth. Add the vanilla extract.
- At this point we do not have to use the food processor. Transfer the batter to the bowl of a stand mixer.
- One important tip: DO NOT OVER MIX THE EGGS. What we need to do is in a separate bowl, lightly beat the eggs, then add them to the cream cheese mixture. With a rubber spatula mix the eggs into the batter. Using the paddle attachment beat the batter only for 15 seconds. Again DO NOT OVER MIX THE EGGS 🙂
Assembling
- Pour the batter over the brownie batter. Mix the reserved brownie batter with 1-2 tablespoons of hot milk. Place dollops of this mixture on top of the cheesecake batter. Using a skewer or the tip of a knife, drag the brown batter into the white batter and make the marble effect. Bake for 45 minutes.

Ingredients
For The Brownie
- 1 cup Butter
- 1½ cup Semi-sweet chocolate chips
- 1 cup Granulated sugar
- 1 cup Brown Sugar, packed
- ½ cup Cocoa powder, Sifted
- ½ teaspoon Salt
- 2 Eggs, Room temperature
- 1 Yolk, Room Temperature
- 1 cup All-purpose flour, Spooned and leveled
- 1 tablespoon Coffee powder
- 1 tablespoon Vanilla extract
- 1-2 tablespoon Hot milk
For The Cheesecake
- 2 Blocks Cheesecake, 16 ounce, Room temperature
- 1 cup Sugar
- 1 tablespoon Vanilla extract
- 2 Eggs, Room Temperature
- 1 Yolk, Room Temperature
Instructions
How To Make The Brownie Base
- Preheat the oven to 350°F. Grease and line an 8X8 pan with parchment paper. set aside.
- Melt the butter and chocolate in the microwave for 20-second intervals. Until the chocolate starts to melt.1 cup Butter, 1½ cup Semi-sweet chocolate chips
- Once the chocolate is completely smooth, add the cocoa powder and mix. Let this mixture sit for a few minutes. Cocoa powder needs to bloom and activate.½ cup Cocoa powder
- Whisk both sugars. Add the eggs one at a time. Add the yolk and vanilla extract and mix. Add this mixture to the chocolate mixture.1 cup Granulated sugar, 1 cup Brown Sugar, packed, 2 Eggs, 1 Yolk, 1 tablespoon Vanilla extract
- Whisk together the flour, salt, and coffee powder. Add this mixture to the above mixture. DO NOT OVERMIX.½ teaspoon Salt, 1 cup All-purpose flour, 1 tablespoon Coffee powder
- Take ½ cup of this mixture and set it aside. We need this for the marbling effect.
- Pour the batter into the prepared pan and smooth out the surface. Set aside.
How To Make The Cheesecake
- In a food processor mix the cream cheese and sugar. Blitz a few times until the mixture is smooth and silky. Add the vanilla extract.2 Blocks Cheesecake, 16 ounce, 1 cup Sugar, 1 tablespoon Vanilla extract
- In a separate bowl lightly beat the eggs and the egg yolk. Transfer the batter to the bowl of the stand mixer. Add the eggs to the batter and mix with a rubber spatula. Beat with the paddle attachment for only 15 seconds. DO NOT OVERMIX.2 Eggs, 1 Yolk
- Mix the reserved brownie mixture with a couple of hot milk to thin it out.1-2 tablespoon Hot milk
- Pour the cheesecake batter over the brownie mixture in the pan. smooth out the surface.
- Using a tablespoon spread dollops of the reserved brownie mixture on top of the cheesecake batter and with the tip of a paring knife or skewer drag the brown batter into the cheesecake batter, and create the marble effect.
- Bake for 45 minutes. Until the sides are set, and the center of the cheesecake is still jiggly.
- Turn the oven off, and leave the oven door cracked open for a half-hour. Then transfer the pan to the fridge and let the cheesecake set and firm up.
