- This Almond Cranberry Muffins recipe uses almond paste! No panic, you can make your homemade almond paste in just a few minutes. Almond paste adds extra flavor and a creamy texture to the muffins. There is also some portion of almond flour. Again add more flavor and texture.
- We also use coconut milk as well as coconut shreds in this recipe. Coconut milk adds a nutty flavor and moisture, and the shreds bring additional texture to each bite.
- The list of flavorful ingredients does not end here! Yes, we need some orange zest and orange juice. It is needless to say that orange is one of the most fragrant and aromatic additives to baked goods.
- The other important ingredient is cranberries. Dried cranberries add both texture and flavor.
- What is worth mentioning about this recipe is the butter. Unlike other muffin recipes, the butter should be at room temperature, in this Almond Cranberry Muffin recipe, we use cold butter. Once the cold butter is added to the flour, using a pastry cutter or your clean fingers, mix the butter into the flour. In this method chunks of butter will melt in the batter once in the oven, and makes the crumb very fluffy.

Almond Cranberry Muffins
Ingredients
- 1½ cups All-purpose flour, Spooned and leveled
- ⅓ cup Almond flour
- ⅔ cup Sugar
- 1 teaspoon Baking powder
- ¼ teaspoon Baking soda
- ¼ teaspoon Salt
- ⅓ cup Butter, Cold and diced
- ¼ cup Almond paste, see notes
- 1 Egg, Room temperature
- 1 tablespoon Orange zest
- ½ cup Orange juice, Freshly squized
- ¼ cup Coconut milk
- ⅓ cup Shredded coconut
- ½ cup Dry cranberry
- ¼ cup Sliced almonds, for topping
Instructions
- Preheat the oven to 350°F, and line a 12-cavity muffin tray with liners. Set aside.
- Mix all dry ingredients and set aside.1½ cups All-purpose flour, ⅓ cup Almond flour, ⅔ cup Sugar, 1 teaspoon Baking powder, ¼ teaspoon Baking soda, ¼ teaspoon Salt
- Add the butter and the almond paste, and with your fingertips mix them in. until the mixture looks like wet sand.⅓ cup Butter, ¼ cup Almond paste
- In a separate bowl mix the egg, coconut milk, orange juice, and orange zest.1 Egg, 1 tablespoon Orange zest, ½ cup Orange juice, ¼ cup Coconut milk
- Make a well in the center of the dry ingredients, and add the egg mixture, Gently mix. Do not overmix.
- At the end add the shredded coconut and the dry cranberries and mix.⅓ cup Shredded coconut, ½ cup Dry cranberry
- Fill up the muffin liners, and sprinkle their top with almond slices and coconut shreds. DO NOT DROP DRY CRANBERRIES ON TOP OF THEM. Cranberries make the top heavy and stop them from rising.¼ cup Sliced almonds
- And bake for 20-25 minutes. Let the muffins cool down in the pan for 10 minutes and then transfer them to the cooling rack to cool completely.
Notes
- Almond paste: Mix ½ cup almond flour, ⅓ cup powdered sugar, 1 tablespoon melted butter, and 1 tablespoon corn syrup. Add ¼ teaspoon almond extract for flavoring.
