About This Recipe
- Despite its look, this cake is very easy to make. The base which is going to be the top contains roasted pecans and walnut. Roasting nuts enhances the flavors and adds a ton of richness to the recipe.
- The base also has a good amount of brown sugar and butter. These are the same ingredients for making caramel. The nuts are heated in the caramel mixture to make a uniform flavor.
- One other ingredient is honey. Honey also adds flavor plus bonds the nuts together.
- There are also some warm spices such as cinnamon and cardamom in the nut mixture
- The cake recipe is a basic vanilla cake that during the baking process absorbs the syrupy liquid from the nut mixture and becomes super moist and rich in flavor.
- One ingredient that adds to this cake's flavor and texture is sour cream. Sour cream adds moisture as well as a tangy flavor to the cake.
How To Make This Pecan Walnut Upside Down Cake
- Preheat the oven to 350F and place both nuts on a baking sheet. Place in the oven and roast them for about 10 minutes. Keep an eye on them. Nuts burn very easily. Once you can smell roasted nuts, remove them from the oven.
- Start by melting the butter and then add the brown sugar along with the spices, and honey. Let this mixture cook for a few minutes, then add the nuts and allow the mixture to cook for a couple more minutes.
- Pour this mixture into a square 9X 9 pan and set aside.
- For making the cake, cream the butter and sugar for a few minutes. Then add the eggs, and mix well.
- Next, add the sour cream and mix well. At the end add the dry ingredients and gently mix.
- Pour the cake mixture over the nut mixture in spoonfuls.
- Once the cake starts rising. it will come higher than the edge of the pan. Not to worry. Once the baking process is finished, the cake will go down.
- Let the Pecan Walnut Upside Down Cake stay in the pan for five minutes. Run a knife around the cake and flip the cake on the cooling rack. DO NOT WAIT FOR THE CAKE TO COOL DOWN BEFORE REMOVING IT FROM THE PAN.
