    • All-purpose flour, baking powder, and salt are the base of the loaf.
    • The chocolate flavor in this recipe comes from unsweetened cocoa powder. It is essential to use good-quality cocoa powder to have a rich chocolate cake.
    • Always add some coffee flavor, such as espresso powder or brewed coffee, to enhance the chocolate flavor. This recipe calls for half a cup of hot coffee.
    • We need one cup of buttermilk for this Decadent Chocolate Loaf Cake. Buttermilk makes the crumb very moist and fluffy, adding a tangy flavor to the cake.

    How To Make This Double Chocolate Loaf Cake

    • Sift all dry ingredients, including cocoa powder, together and set aside.
    • Melt the butter, remove it from the heat, add the oil and mix well.
    • Mix the eggs and sugars, and whisk well; add the vanilla extract next.
    • Add the buttermilk and melted butter/oil to the egg mixture and mix well.
    • Add the dry ingredients and gently mix.
    • Add in the hot coffee and mix. DO NOT OVERMIX.
    • Bake the batter in a lined 81/2 X 41/2 inch pan. Let it cool down before frosting.

    • To make the ganache, heat the heavy cream until it simmers. Add the chopped chocolate to the hot cream. Make sure the chocolate is fully covered with hot cream.
    • DO NOT stir the mixture, and let it sit for 5 minutes. Stir the mixture until it is homogenous and smooth.
    • Let the ganache sit on the counter to thicken a bit and spread it on the loaf.

    Ingredients
     

    For The Loaf

    • 1½ cups All-purpose flour, Spooned and leveled
    • ½ cup Cocoa powder
    • 2 teaspoon Baking powder
    • ¼ teaspoon Baking soda
    • ¼ teaspoon Salt
    • ½ cup Butter
    • ¼ cup Oil
    • 2 Eggs, Room temperature
    • 1 cup Granulated sugar
    • ¼ cup Light Brown sugar, Packed
    • 1 cup Buttermilk, Room temperature
    • ½ cup Hot coffee
    • 2 teaspoon Vanilla extract

    For The Ganache

    • 6 ounce Semi-sweet chocolate, Chopped
    • ¾ cup Heavy cream

    Instructions
     

    How To Make The Loaf

    • Preheat the oven to 350°F. grease an 8½ X 4½ inch loaf pan. Line the pan with parchment paper, and then butter the paper. Set the pan aside.
    • Sift all the dry ingredients and set aside.
      1½ cups All-purpose flour, ½ cup Cocoa powder, 2 teaspoon Baking powder, ¼ teaspoon Baking soda, ¼ teaspoon Salt
    • Melt the butter then add the oil, mix and set aside to cool down slightly.
      ½ cup Butter, ¼ cup Oil
    • Beat the eggs with two sugars for a couple of minutes.
      2 Eggs, 1 cup Granulated sugar, ¼ cup Light Brown sugar
    • Add the buttermilk and melted butter/oil to the egg mixture and mix well.
      1 cup Buttermilk, 2 teaspoon Vanilla extract
    • Use a spatula and fold in the dry ingredients. Do not blend the dry ingredients completely.
    • Add the hot freshly brewed coffee and mix.
      ½ cup Hot coffee
    • Pour the batter into the lined pan and bake for 40-45 minutes. Until an insert comes out clean. Let the loaf cool down in the pan for 15 minutes then transfer to the cooling rack to cool down completely before frosting.

    How To Make The Ganache

    • Chop the chocolate into small pieces, and place in a medium size bowl.
      6 ounce Semi-sweet chocolate
    • Place the heavy cream in a saucepan and heat until the cream starts simmering.
      ¾ cup Heavy cream
    • Pour the hot cream over the chocolate and let sit for five minutes. Make sure all the chocolate is covered with the cream. After five minutes, gently stir the mixture until the chocolate is melted and the mixture is smooth and lump-free.
    • Place the bowl in the fridge for a few minutes until the mixture thickens a bit and spread it all over the cool loaf.
