If you have a couple of cups of mixed berries in your fridge, you are halfway there to make these delicious Berry Crumble Bars. This recipe checks all the boxes for a quick and yummy summer dessert.
About This Recipe
- This recipe has two separate parts, the crumble and the berry filling.
- The crumble mixture goes as the base crust and the topping. This mixture contains quick oats, flour, butter, cinnamon, nutmeg, baking powder, and vanilla.
- To have the best crumble, the butter should be cold. Cold butter does not spread into the mixture and creates clusters of oat mixture.
- The quick oat adds texture, flavour, and volume to the crumble.
- I love the touch of warm spices such as cinnamon and nutmeg to have an extra kick in the flavour.
- As for the berries, you can use all kinds of summer berries, such as chopped strawberries, raspberries, blackberries etc.
- To have some extra flavour, I added dollops of jam, which can vary from sweet jams like raspberry jam or sweet- sour ones like apricot jam. This will add some additional flavour and moisture to the recipe.
How To Make These Berry Crumble Bars
- For this recipe, we need a food processor to grind the quick oats and blend them with the flour, brown sugar, spices, and leavener. The mixture will be quite powdery and light.
- Add the cold butter to the food processor and grind until the mixture looks broken and the butter turns into small pieces the size of a lentil. The mix is ready when you squeeze a small amount into your fingers; the mixture sticks together, and a cluster forms. If the mixture is too powdery and dry, add a small amount of milk to make it stick together.
- Press half of this mixture onto the bottom of a lined 9X15-inch pan, and bake it for 15 minutes or until golden brown. Let it cool down.
Go Wild With Berries
- I mixed four berries, strawberries, raspberries, blackberries, and blueberries for these Berry Crumble Bars. Toss a couple of teaspoons of flour on them to coat them, then spread them over the base.
- Drop a few tablespoons of the jam of your choice, such as raspberry, and spread it with a spatula. I used Raspberry and Apricot Jam.
- Drizzle two tablespoons of maple syrup over the berries.
- Spread the remaining oat mixture all over the berries. If the mixture has small clusters, pinch some in your hand to make larger clusters.
- Bake it for 30 minutes, let it cool down in the pan for one hour, then transfer to the fridge for at least an hour before cutting.
