Ingredients

For The Cookies

  • ¾ cup Butter, Room-temperature
  • 1 cup Granulated sugar
  • 1 Egg, Room-temperature
  • 1 tablespoon Vanilla extract
  • ½ teaspoon Almond extract
  • 3 cups All-purpose flour, Spooned and levelled
  • 1 teaspoon Baking powder
  • ¼ teaspoon salt
  • 1 teaspoon Cinnamon

For The Icing

  • 2 cups Powdered sugar
  • 3-4 tablespoon Milk
  • ½ teaspoon Vanilla extract

For Decorations

  • 10 Marshmallows, Large
  • Sprinkles
  • 20 Rees's cup, Miniature

Instructions

How To Make The Cookies

  • Preheat the oven to 350℉, and line two baking sheets with parchment paper or baking mat.
  • Using the paddle attachment, beat the room-temperature butter and sugar for 2-3 minutes until the mixture is fluffy and pale.
¾ cup Butter, 1 cup Granulated sugar
  • Add in the egg, vanilla and almond extract, and mix well.
1 tablespoon Vanilla extract, ½ teaspoon Almond extract, 1 Egg
  • In a separate bowl, sift the AP flour, Cinnamon, baking powder, and salt and add it to the butter mixture in two additions. Mix all together, but do not overmix.
3 cups All-purpose flour, 1 teaspoon Baking powder, ¼ teaspoon salt, 1 teaspoon Cinnamon
  • Lightly flour a clean surface and roll the cookie dough to ¼ inch thick. Use a medium-sized round cookie cutter, 2-inch, to cut the cookies.
  • Place them on a lined baking sheet and bake them for 8-10 minutes. Cookies are done when the edges are set and slightly golden. Let the cookies cool down on the baking sheet for 10 minutes, and then transfer them to the cooling rack to cool down completely.

Icing And Decorating

  • Cut the large marshmallow in half, place one half on the cookie, and try not to put it in the center to leave some space for the icing to run and flow.
    10 Marshmallows
  • Mix the powdered Sugar, Milk, and a touch of Vanilla Extract. Powdered sugar contains cornstarch, and this may affect the icing's consistency. To have the perfect consistency, if the icing is too runny, add some powdered sugar; if it is too stiff, add some milk. The icing should be pourable but not too runny to decorate these cookies and stay on the marshmallow and sugar.
2 cups Powdered sugar, 3-4 tablespoon Milk, ½ teaspoon Vanilla extract
  • Make the icing, pour one tablespoon over the marshmallow, and direct it to the sides. Add the mini Rees's Cup, sprinkles for the eyes, buttons, etc. Let the icing set and harden for about one hour.
