Cream the butter with two sugars until light and fluffy.
1 cup Butter, 1 cup Granulated sugar, ¾ cup Brown sugar
Add the eggs one at a time and beat well after each one.
2 Eggs
Add in vanilla extract and mix.
1 tablespoon Vanilla extract
Sift all the dry ingredients and add them to the butter mixture. Using a spatula, gently fold in the flour.
1¾ cup All-purpose flour, ⅔ cup Whole wheat flour, ¾ teaspoon Baking soda, ¼ teaspoon Salt
At the end, add the chopped chocolate and the nuts (If using).
10 ounce Semi-sweet chocolate, 1 cup Walnuts
Cover the dough with cling wrap and chill for at least one hour.
Preheat the oven to 350F and line the baking sheets with parchment paper.
Use an ice cream scoop to scoop the dough into small balls, about 30 grams each. Place them on the baking sheet with at least 2 inches of space between them. Place a few pieces of chopped chocolate on them and bake them for 8- 10 minutes. Cookies are done when the edges are set, and the cookies are slightly golden. Let the cookies cool down on the baking sheet, then transfer them to a cooling rack to cool down completely.
