Make the Red Velvet Cake, either the Red Velvet Bundt Cake or the Betty Crocker Cake Mix. Use your fingertips or the food processor to smash the cake into fine crumbs. If using the food processor, blitz the cake just a few times for consistency. Do not process too long, or your cake will become a paste.
1 Red Velvet Cake Mix
Use the paddle attachment to soften the room-temperature cream cheese, then add the cake crumbs and vanilla extract. Mix everything until you have a consistent and cohesive red dough.
8 ounce Cream Cheese, 2 teaspoon Vanilla extract
Use an ice cream scoop to make small balls the size of a large walnut, about 30 grams each. Place them on a tray and chill them in the fridge for one hour.
Melt the dark chocolate on the double boiler or microwave at 20-second intervals, stirring after each time. Use a fork to lift each ball and dip it in the melted chocolate. Transfer the ball to a cooling rack to drip the excess chocolate. Let the coating set for about half an hour.
12 ounce Dark chocolate
Melt the milk chocolate, white chocolate, or any colour contrasting with dark chocolate. Pour it into a plastic bag and nip the end. Run it over the chocolate balls to create the lines. Let the chocolate balls set for another half an hour for the lines to set and harden.
1 cup Milk chocolate chips
Notes
Be sure to use chocolate bars and NOT chocolate chips.
You can use white chocolate or any chocolate that contrasts with dark chocolate to make lines more visible.
