The most delicious, soft, chewy, and easy oatmeal cookie recipe
These Walnut-Oatmeal-Raisin cookies are my absolute favorite cookies by far. These cookies are very soft and chewy, with a nice crunch from the chopped walnuts. These cookies are very filling and they can be a perfect mid-day snack.
THIS RECIPE IS GREAT BECAUSE
- NO FANCY INGREDIENTS: All ingredients used in this recipe are probably in your pantry or fridge right now.
- EASY PREP TIME: This recipe comes together very quickly in only 5 minutes.
- NO CHILLING REQUIRED: One of the great things about this recipe is that you do not need to chill the dough 🙂
- ANY KIND OF OATS WILL WORK: For these cookies, any kind of oats works perfectly and that includes; quick oats or old fashioned oats.
INGREDIENT NOTE
- Rolled Oats- Oats are a great source of fiber, protein, and vitamin B. Yes, my friends! we are making healthy cookies here;)
- Raisin- This ingredient adds a natural sweetness to our cookies. Also, raisin is a great source of iron.
- Brown sugar- let's talk about one of my favorite raw ingredients. brown sugar contains molasses, which adds a ton of moisture to any baked goods. And brown sugar creates browning and a very delicious aroma in the cookies.
- Walnut- Incorporating nuts in any kind of cookie, takes the taste and flavor to the top level. Only if you don't have any nut allergies! Again walnuts contain a lot of iron and healthy fat and let's not forget about the crunch that walnut will bring to these delicious Walnut-Oatmeal-Raisin Cookies.
- Cinnamon- There is one teaspoon of cinnamon used in this recipe to have a better combination of flavors and spice.

Walnut-Oatmeal-Raisin
The most delicious, soft, chewy, and easy oatmeal cookie recipe
Ingredients
- 1½ cups All-purpose flour, Spooned and leveled
- 1 cup Brown sugar, packed
- ½ cup Granulated sugar
- 1 teaspoon Cinnamon
- 1 cup Butter, Room temperature, not too soft though
- ½ teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 2 Eggs, large, Room temperature
- 1 Yolk, Room temperature
- 1 tablespoon Vanilla extract
- 3 cups Rolled oats
- 1 cup Raisins
- 1 cup Chopped walnuts
Instructions
- Put the butter out of the fridge before starting the process. Butter needs to be soft, but not too soft.1 cup Butter
- Preheat the oven to 350°, and line two baking sheets with parchment paper. Set aside.
- Sift all dry ingredients, and set aside.1½ cups All-purpose flour, ½ teaspoon Baking powder, ½ teaspoon Baking soda, ½ teaspoon Salt, 1 teaspoon Cinnamon
- Set your mixer on paddle attachment. Cream the butter with two sugars. Scrape down the bowl as needed. This will take about two minutes.1 cup Brown sugar, packed, 1 cup Butter, ½ cup Granulated sugar
- Add the eggs, one at a time, and mix after each one. Add the egg yolk, and the vanilla extract.2 Eggs, large, 1 Yolk, 1 tablespoon Vanilla extract
- Add the dry ingredients, and mix just until the flour is incorporated.1½ cups All-purpose flour, 1 teaspoon Cinnamon, ½ teaspoon Baking powder, ½ teaspoon Baking soda, ½ teaspoon Salt
- Fold in the oats, raisins, and walnuts, and mix until all distributed evenly.3 cups Rolled oats, 1 cup Raisins, 1 cup Chopped walnuts
- Scoop the dough into small balls, the size of a small tangerine, and place them on the baking sheets. Leave a 2-inch space between them.
- Bake at the 350° oven for 12 minutes. Until the edges of the cookies are set. The center of the cookies should look undercooked. They keep baking after they are removed from the oven.
- Place the baking sheet on the counter for a few minutes, then transfer the cookies to the cooling rack and let them cool down.
Notes
- Both quick oat and old-fashioned oat will work perfectly in this recipe.
- Do not overbake the cookies. The center of the cookies should look slightly underbaked.
