It is a very delicious and flavorful vegan and GF cake with a ton of flavors and chopped apples.
When I started my blog, wanted to have a section for GF and Vegan recipes. There will be a few recipes for those of you who are GF or Vegan 🙂
This recipe is very simple and comes together very quickly, and if you follow a vegan diet, I am sure you already have a lot of these recipes in your pantry.
Why this recipe is good

Ingredients Note
- The structure of the cake is coming from the almond flour and the gluten-free flour. Almond flour contributes to the fat content in the recipe as well.
- The gluten-free flour used in this recipe is 100% gluten-free. I have used CUP 4 CUP gluten-free flour. Oat flour will work.
- Brown sugar is GF and vegan, and not only makes the cake sweeter, but it also gives a lot of flavor and moisture to the cake.
- Coconut sugar is less sweet than brown sugar, and it has a very soft coconut flavor. it also has a lot of nutrients as opposed to granulated sugar. Some of these nutrients contain minerals like iron, zinc, calcium, potassium, and fiber.
- Cinnamon & clove are what are used in this cake Apple Spice Vegan Cake. The aroma of the apple and the spices make this cake very aromatic.
- Non-dairy milk that I use in this recipe is unsweetened coconut milk. This ingredient adds flavor and calcium to the recipe.
- Vegan butter that I am using here is the Earth Balance original. There are other vegan butters in the market that you can use. Miyoko's vegan butter is a good one.
For The Fruit
I have used apple, but other fruits such as pear or peach can also be used.
- Apple, Last but not least ingredient is the apple which is the main flavor in this cake. I have used Fuji apples, but you can use any brands such as Golden Delicious, Pink lady or Granny Smith, etc.

Apple Spice Vegan Cake
It is a very delicious and flavorful vegan and GF cake with a ton of flavors and chopped apples.
Ingredients
Vegan Cake
- 2½ cups Almond flour
- 1 cup Gluten-free flour, I used CUP 4 CUP
- ¾ cup Coconut milk, Unsweetened
- ½ cup Vegan butter, melted, I used Earth Balance
- ¼ cup Brown sugar
- ½ cup Coconut sugar
- 1 teaspoon Cinnamon
- ½ teaspoon Clove
- 1½ teaspoon Baking powder
- 1½ teaspoon Baking soda
- 1 tablespoon Vanilla extract
- 1½ cups Chopped apple, I used Fuji apples
Topping
- ⅓ cup Brown sugar
- ¼ cup Coconut sugar
- ¼ teaspoon Cinnamon
- ½ cup Almond flour
- ⅓ cup Vegan butter, Melted
Instructions
How To Make The Cake
- Preheat the oven to 350. Grease and line a 9X 9 square pan. Set aside.
- Mix both flours, baking powder, baking soda, cinnamon, and clove. Set aside2½ cups Almond flour, 1 cup Gluten-free flour, 1 teaspoon Cinnamon, 1½ teaspoon Baking powder, 1½ teaspoon Baking soda, ½ teaspoon Clove
- In a large bowl mix the melted butter, coconut milk, Brown sugar, and coconut sugar. Beat well. You do not need an electric mixer. A spatula will do the trick.¾ cup Coconut milk, ½ cup Vegan butter, melted, ¼ cup Brown sugar, ½ cup Coconut sugar
- Add the dry ingredients to the above mixture, and mix well.
- Add the chopped apples1½ cups Chopped apple
- Pour this batter into the prepared pan, and smooth out the surface. The batter will be thick and it's okay.
- Bake for 30-35 minutes, until the sides are set.
How To Make The Topping
- Melt the butter, add both sugars, cinnamon, and vanilla extract, and mix well. Add the almond flour gradually until the mixture becomes dry and crumbly.¼ cup Brown sugar, 1 tablespoon Vanilla extract, ⅓ cup Brown sugar, ¼ cup Coconut sugar, ¼ teaspoon Cinnamon, ⅓ cup Vegan butter, ½ cup Almond flour
- After 30 minutes bring the cake out of the oven, spread the topping all over it, and distribute. Put back into the oven and bake for another 8-10 minutes.
- Leave the cake in the pan for 10 minutes then transfer to the cooling rack and let cool completely.
