Apple Spice Vegan Cake

It is a very delicious and flavorful vegan and GF cake with a ton of flavors and chopped apples.

Ingredients
 

Vegan Cake

  • cups Almond flour
  • 1 cup Gluten-free flour, I used CUP 4 CUP
  • ¾ cup Coconut milk, Unsweetened
  • ½ cup Vegan butter, melted, I used Earth Balance
  • ¼ cup Brown sugar
  • ½ cup Coconut sugar
  • 1 teaspoon Cinnamon
  • ½ teaspoon Clove
  • teaspoon Baking powder
  • teaspoon Baking soda
  • 1 tablespoon Vanilla extract
  • cups Chopped apple, I used Fuji apples

Topping

  • cup Brown sugar
  • ¼ cup Coconut sugar
  • ¼ teaspoon Cinnamon
  • ½ cup Almond flour
  • cup Vegan butter, Melted

Instructions
 

How To Make The Cake

  • Preheat the oven to 350. Grease and line a 9X 9 square pan. Set aside.
  • Mix both flours, baking powder, baking soda, cinnamon, and clove. Set aside
    2½ cups Almond flour, 1 cup Gluten-free flour, 1 teaspoon Cinnamon, 1½ teaspoon Baking powder, 1½ teaspoon Baking soda, ½ teaspoon Clove
  • In a large bowl mix the melted butter, coconut milk, Brown sugar, and coconut sugar. Beat well. You do not need an electric mixer. A spatula will do the trick.
    ¾ cup Coconut milk, ½ cup Vegan butter, melted, ¼ cup Brown sugar, ½ cup Coconut sugar
  • Add the dry ingredients to the above mixture, and mix well.
  • Add the chopped apples
    1½ cups Chopped apple
  • Pour this batter into the prepared pan, and smooth out the surface. The batter will be thick and it's okay.
  • Bake for 30-35 minutes, until the sides are set.

How To Make The Topping

  • Melt the butter, add both sugars, cinnamon, and vanilla extract, and mix well. Add the almond flour gradually until the mixture becomes dry and crumbly.
    ¼ cup Brown sugar, 1 tablespoon Vanilla extract, ⅓ cup Brown sugar, ¼ cup Coconut sugar, ¼ teaspoon Cinnamon, ⅓ cup Vegan butter, ½ cup Almond flour
  • After 30 minutes bring the cake out of the oven, spread the topping all over it, and distribute. Put back into the oven and bake for another 8-10 minutes.
  • Leave the cake in the pan for 10 minutes then transfer to the cooling rack and let cool completely.
