About These Cookies
- Confetti cookies are soft, buttery, delicious, and beautiful.
- All the ingredients are very easy to prepare, and the recipe comes together in a few minutes! The bake time is only 10 minutes 🙂
- The recipe calls for both one whole egg and one egg yolk in this recipe. Egg yolk is a binding agent and gives the cookies a chewy and soft texture.
- The cookies on this page are large; however, you can bake them in a smaller size. Just spoon a smaller amount onto the baking sheet, about one tablespoon.
- We need both granulated sugar and powdered sugar in this recipe. Powdered sugar contains some starch which gives the cookies a chewy texture.
- These cookies are perfect for making a cookie ice cream sandwich! A perfect summer treat.
- For the sprinkles, use more miniature sprinkles. Larger sprinkles might interfere with the cookie texture. I used these Sprinkles.

Confetti Cookies
Ingredients
- 2½ cups All-purpose flour, 315 gr., Spooned, and leveled
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Butter, Room Temperature
- 1 Large egg, Room Temperature
- 1 Egg yolk, Room Temperature
- 1 cup Granulated sugar
- ½ cup Powdered sugar, Sifted
- 1 tablespoon Vanilla extract
- ½ cup Sprinkles
Instructions
- Preheat the oven to 350°F, and line two baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt. set aside.2½ cups All-purpose flour, 315 gr., 1 teaspoon Baking soda, ½ teaspoon Salt
- Using the paddle attachment, cream the butter and two sugars until light and fluffy. This may take up to 3-4 minutes.1 cup Butter, 1 cup Granulated sugar, ½ cup Powdered sugar
- Add in the egg, and beat for a few seconds, then add the egg yolk and vanilla extract. Beat until all is incorporated.1 Large egg, 1 Egg yolk, 1 tablespoon Vanilla extract
- Using a rubber spatula, add the dry ingredients and mix. DO NOT OVERMIX. Add the sprinkles and mix.½ cup Sprinkles
- Scoop the dough onto the lined baking sheets. Leave a 2-inch space between them. Bake for 10-12 minutes. Until the edges are set and slightly golden.
- Put the baking sheet on the cooling rack for 10 minutes. Then transfer the cookies to the cooling rack and let cool completely.
