Instructions
Preheat the oven to 350°F, and line two baking sheets with parchment paper.
Whisk together flour, baking soda, and salt. set aside.
2½ cups All-purpose flour, 315 gr.,
1 teaspoon Baking soda,
½ teaspoon Salt
Using the paddle attachment, cream the butter and two sugars until light and fluffy. This may take up to 3-4 minutes.
1 cup Butter,
1 cup Granulated sugar,
½ cup Powdered sugar
Add in the egg, and beat for a few seconds, then add the egg yolk and vanilla extract. Beat until all is incorporated.

1 tablespoon Vanilla extract
Using a rubber spatula, add the dry ingredients and mix. DO NOT OVERMIX. Add the sprinkles and mix.
½ cup Sprinkles
Scoop the dough onto the lined baking sheets. Leave a 2-inch space between them. Bake for 10-12 minutes. Until the edges are set and slightly golden.
Put the baking sheet on the cooling rack for 10 minutes. Then transfer the cookies to the cooling rack and let cool completely.
Notes
If using the cookies for ice cream sandwiches, let the cookies cool down completely.
