These delicious and fruity peach bars are loaded with chopped peaches. Summer is the fruit season 🙂 its time to take advantage of all the delicious and juicy fruits that summer can offer. These buttery peach bars are baked on a buttery shortbread base and topped with a crunchy topping.

How To Make these Buttery Peach Bars
- I recommend using a food processor and Process the flour, sugar, baking powder, cinnamon, and salt.
- Then add the cold butter and pulse until the mixture resembles wet sand.
- Transfer the mixture to the bowl of a stand mixer, and set the whisk attachment.
- Lightly beat the egg and add to the mixture. Mix until well incorporated and when pressing some of the mixture between your fingers, it should hold a shape.
- Press ⅔ of the mixture to the bottom of the prepared pan. Reserve the other ⅓ for topping. Bake for 10 minutes.
- In the meantime, prepare the peach filling. In a mixing bowl, mix the corn starch, vanilla extract, and sugar. Add the chopped peaches to the bowl and mix, Make sure all the peach pieces are coated with the corn starch and sugar mixture.
- Evenly distribute the peach mixture on top of the baked base, and using the remaining dough, place clusters of dough all over the peach mixture. Sprinkle the top with coarse brown sugar. I use this; Coarse Brown Sugar
- Bake until the top is golden. Let cool and then place in the fridge to set before cutting.

Ingredients
For The Crust
- 2½ cup All-purpose flour, Spooned and leveled
- 1 cup Sugar
- 1 cup Batter, Cold and cubed
- 1 tablespoon Lemon zest
- ½ teaspoon Salt
- 1 tablespoon Vanilla extract
- 2-3 tablespoon Cold water
For The Peach Filling
- 3 cups Peach, Orange color, Diced
- 2 tablespoon Sugar
- 2 tablespoon Corn starch
- ½ tablespoon Vanilla extract
- ¼ cup Lemon juice, Freshly squeezed
- ¼ cup Coarse brown sugar, Optional
Instructions
How To Make The Crust
- Preheat the oven to 350°F. Grease and line a 9X9 square pan. Set aside.
- Put the sugar, flour, salt, and lemon zest in a food processor and pulse a few times until smooth.2½ cup All-purpose flour, 1 cup Sugar, 1 tablespoon Lemon zest, ½ teaspoon Salt
- Add the cold butter and pulse until the dough resembles wet sand.1 cup Batter
- Add 1 tablespoon of the ice water, and pulse again. If the dough seems too dry add one more tablespoon of the cold water. Add the vanilla extract and pulse one more time.2-3 tablespoon Cold water, 1 tablespoon Vanilla extract
- Pour this mixture into the prepared pan, and press down. Set aside.
How To Make The Peach Filling
- In a large bowl mix together diced peaches, corn starch, sugar, Vanilla extract, and lemon juice. Make sure all the peach pieces are coated with corn starch and sugar.3 cups Peach, Orange color, 2 tablespoon Sugar, 2 tablespoon Corn starch, ½ tablespoon Vanilla extract, ¼ cup Lemon juice
- Distribute the above mixture on top of the crust, and spread evenly. with your fingertips make clusters of the remaining crust mixture (⅓) and spread it on top of the peach mixture. Sprinkle some coarse sugar all over the pan.¼ cup Coarse brown sugar
- Bake for one hour, Let cool completely, then transfer into the fridge for 15 minutes before cutting.
Notes
- Make sure butter comes out of the fridge right before it is added to the flour mixture.
- To have icy cold water, put a few ice cubes in a glass, and pour cold water over the ice.
