Preheat the oven to 350°F. Grease and line a 9X9 square pan. Set aside.
Put the sugar, flour, salt, and lemon zest in a food processor and pulse a few times until smooth.
2½ cup All-purpose flour, 1 cup Sugar, 1 tablespoon Lemon zest, ½ teaspoon Salt
Add the cold butter and pulse until the dough resembles wet sand.
1 cup Batter
Add 1 tablespoon of the ice water, and pulse again. If the dough seems too dry add one more tablespoon of the cold water. Add the vanilla extract and pulse one more time.
Pour this mixture into the prepared pan, and press down. Set aside.
How To Make The Peach Filling
In a large bowl mix together diced peaches, corn starch, sugar, Vanilla extract, and lemon juice. Make sure all the peach pieces are coated with corn starch and sugar.
3 cups Peach, Orange color, 2 tablespoon Sugar, 2 tablespoon Corn starch, ½ tablespoon Vanilla extract, ¼ cup Lemon juice
Distribute the above mixture on top of the crust, and spread evenly. with your fingertips make clusters of the remaining crust mixture (⅓) and spread it on top of the peach mixture. Sprinkle some coarse sugar all over the pan.
¼ cup Coarse brown sugar
Bake for one hour, Let cool completely, then transfer into the fridge for 15 minutes before cutting.
Notes
Make sure butter comes out of the fridge right before it is added to the flour mixture.
To have icy cold water, put a few ice cubes in a glass, and pour cold water over the ice.
