    Densely textured cakes such as loaves and Bundt cakes are my favorite kind of cakes. Among all the loaf cakes, marble cakes have the trophy of being beautiful and delicious, and being a perfect coffee cake. This marble loaf is very delicious and has the most beautiful swirls in each slice.

    About This Recipe

    • This marble loaf does not require any fancy ingredients. There are two batches of batters that go into this loaf, the vanilla batch, and the chocolate batch.
    • The texture of this loaf is the fluffiest and most tender you can imagine 🙂
    • The chocolate part will not be dense after baking and is as tender and moist as the vanilla part.
    • This recipe uses vanilla paste for the vanilla part, however, if you don't have the vanilla bean, vanilla extract is fine. It is just the vanilla bean has more aroma and flavor.

    • For the chocolate part, we need both melted chocolate as well as cocoa powder. Chocolate has to be Baker's Chocolate. DO NOT USE CHOCOLATE CHIPS. Also for the cocoa powder, use unsweetened Cocoa Powder.
    • I use ⅓ cup apple sauce. What apple sauce does is, acts like a moisturizer or tenderizer in the recipe just like the fat content. It also adds to the natural sweetness of the cakes.

    How To Make The Marble Loaf

    • Sift the dry ingredients and save for the next step.
    • Using a mixer set on the whisk attachment, beat the oil, eggs, apple sauce, sugar , and the vanilla paste. This step is very important because this is when all the air bubbles are incorporated into the cake. Beat about 5 minutes.
    • Now we have only the orange juice and the dry ingredients. Using a spatula, mix in half of the orange juice alternating with the dry ingredients in two passes. After adding all the dry ingredients, and the orange juice, put the bowl back on the stand mixer and beat for 15 second. DO NOT OVERMIX.
    • Now lets make the chocolate batter. Melt the chocolate, add the cocoa powder, sugar and the hot water and mix until smooth and lump-free.
    • Add 0ne cup and a half of the vanilla batter to the chocolate batter and only mix until combined. DO NOT OVERMIX.
    • Pour half a cup of the vanilla batter in the pan, then spoon the chocolate batter over the vanilla batter, and repeat until both batters are used.
    • At the end with a toothpick mix the two batters by making swirls. Do not mix completely. Bake and enjoy.

    Ingredients
     

    For The Vanilla Batter

    • 2½ cup All-purpose flour, Spooned and leveled
    • 2 teaspoon Baking powder
    • ¼ teaspoon Salt
    • ½ cup Oil
    • 3 Eggs, Room temperature
    • ⅓ cup Apple sauce, Un-sweetened
    • 1½ cups Sugar
    • ½ cup Orange juice
    • 1 tablespoon Vanilla extract

    For The Chocolate Batter

    • 60 gram Baking chocolate, Un-sweetened- Do not use chocolate chips
    • ¼ cup Sugar
    • ¼ cup Cocoa powder, Un-sweetened
    • ¼ cup Hot water

    Instructions
     

    How To Make The Vanilla Batter

    • Preheat the oven to 350°F. Grease a 9X5 loaf pan and line with parchment paper. leave extra paper from the long side for lifting.
    • Whisk together the flour, baking soda, and salt. Set aside.
      2½ cup All-purpose flour, ¼ teaspoon Salt, 2 teaspoon Baking powder
    • Using a stand mixer set on the whisk attachment, whisk the eggs, apple sauce, sugar, oil, and vanilla extract. Beat for 5 minutes until the batter is paler and has more volume.
      ½ cup Oil, 3 Eggs, 1½ cups Sugar, 1 tablespoon Vanilla extract, ⅓ cup Apple sauce
    • Using a spatula, Incorporate the flour mixture alternating with the orange juice in two passes. Put the bowl back on the stand mixer and beat for 10-15 seconds. Until everything is incorporated. DO NOT OVERMIX. Set aside.
      ½ cup Orange juice

    How To Make The Chocolate Batter

    • Melt the baking chocolate, and add the cocoa powder, sugar, and hot water. whisk until it is smooth and lump-free.
      60 gram Baking chocolate, ¼ cup Sugar, ¼ cup Cocoa powder, ¼ cup Hot water

    How To Assemble

    • Mix 1¼ cup of the vanilla mixture with the chocolate mixture. Until just combined. DO NOT OVERMIX.
    • Cover the bottom of the pan with the vanilla batter. Spoon out the chocolate batter and drop dollops of chocolate over the vanilla batter.
    • Repeat this until both batters are used. With a toothpick make swirls by dragging the chocolate batter into the vanilla batter. Do not mix completely.
    • Bake for one hour or until an insert comes out clean. Leave in the pan for 10 minutes, then transfer to the cooling rack.
