Whisk together the flour, baking soda, and salt. Set aside.

Using a stand mixer set on the whisk attachment, whisk the eggs, apple sauce, sugar, oil, and vanilla extract. Beat for 5 minutes until the batter is paler and has more volume.

Using a spatula, Incorporate the flour mixture alternating with the orange juice in two passes. Put the bowl back on the stand mixer and beat for 10-15 seconds. Until everything is incorporated. DO NOT OVERMIX. Set aside.
