Soft and chewy spice cookies that do not require chill time.
This recipe is a perfect reminder of fall for using a ton of warm spices. These spice cookies have a chewy texture and do not require any chilling time. Spices that I used are cinnamon, ginger, and clove however, other spices such as nutmeg and allspice will work too.
About This Recipe
- This cookie dough does not need to be chilled. As soon as the dough is ready, cookies can go into the oven. If you make the dough ahead of time and chill it, it will be okay.
- The bake time is very short, and these spice cookies are ready in less than 10 minutes.
- This recipe can handle a variety of spices such as cinnamon, clove, ginger, and more.
- Make sure dairy ingredients such as butter, cream cheese, also egg yolk are at room temperature.
- I prefer using the dark fancy molasses because it has a deeper color and richer flavor. I use this Fancy Molasses
- Do not over-mix the cookie dough. Mix the flour in until all the flour is incorporated, and no trace of flour is seen.
- Do not overbake as well. Bake until the edges are set, and the center should still look raw.
How To Make Spice Cookies
- For this recipe we need to set the oven to 375°F to give the dough an initial lift.
- Mix all the dry ingredients first and set them aside. That includes flour, baking soda, salt, and spices.
- Beat the room temperature butter and the cream cheese until creamy and fluffy.
- Add the egg yolk, vanilla extract, and molasses. Beat the mixture well in this stage.
- Add the dry ingredients and mix. The dough will be sticky. You can wet your hands to be able to roll the dough into balls easily.
- Roll the balls of the dough in the granulated sugar, place them on the baking sheet, and bake for 8-10 minutes.

- 2½ cups All-purpose flour, Spooned and leveled
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- 1½ teaspoon Cinnamon
- 1 teaspoon Ginger
- ¼ teaspoon Clove
- 1 Egg yolk, Room temperature
- ¾ cup Butter, Room temperature
- ½ cup Cream cheese, Room temperature
- ⅓ cup Sugar
- ½ cup Dark brown sugar, Packed
- ½ cup Molasses
- 1 teaspoon Vanilla extract
Instructions
- Preheat the oven to 375°F, and line 2 baking sheets with parchment paper. Set aside.

- Beat the butter and the cream cheese until soft and fluffy.¾ cup Butter, ½ cup Cream cheese
- Add both sugars and mix well.⅓ cup Sugar, ½ cup Dark brown sugar
- Add the egg yolk, vanilla extract and the molasses, and mix.1 Egg yolk, ½ cup Molasses, 1 teaspoon Vanilla extract
- Add the flour mixture and mix until the flour is fully incorporated.
- Wet your hands slightly, make small balls out of the dough, and roll them into the granulated sugar.
- Place on the lined baking sheets. Leave an inch of space between them, and bake for 8-10 minutes. Until the edges are set. The center should look a bit raw.
- Bring out of the oven and with a large circle cookie cutter, go around each cookie and soften the little out-of-shape edges.
- Let cool on the baking sheet for 5 minutes, then transfer to the cooling rack.
