Preheat the oven to 375°F, and line 2 baking sheets with parchment paper. Set aside.
Mix the dry ingredients and set aside.
2½ cups All-purpose flour, 1 teaspoon Baking soda, ¼ teaspoon Salt, 1½ teaspoon Cinnamon, 1 teaspoon Ginger, ¼ teaspoon Clove
Beat the butter and the cream cheese until soft and fluffy.
¾ cup Butter, ½ cup Cream cheese
Add both sugars and mix well.
⅓ cup Sugar, ½ cup Dark brown sugar
Add the egg yolk, vanilla extract and the molasses, and mix.

Add the flour mixture and mix until the flour is fully incorporated.
Wet your hands slightly, make small balls out of the dough, and roll them into the granulated sugar.
Place on the lined baking sheets. Leave an inch of space between them, and bake for 8-10 minutes. Until the edges are set. The center should look a bit raw.
Bring out of the oven and with a large circle cookie cutter, go around each cookie and soften the little out-of-shape edges.
Let cool on the baking sheet for 5 minutes, then transfer to the cooling rack.
