About This Recipe
- This recipe calls for very simple ingredients, the prep time is short and quick as well.
- Since there is no baking required, these chocolate mousse bars make a perfect summer dessert. I know how difficult it is to turn the oven on a hot summer day!! So these bars make a cooling yet rich and decadent dessert.
- The chilling time is only 4-5 hours. It is recommended to leave it in the freezer overnight.
- This recipe is very versatile on all levels. I mean, any kind of coarse crumb cookies or crackers such as Biscoff, Oreos, or Graham crackers will work. What I have used here is a mix of chocolate and golden Oreos. However, the sky is your limit on what to use in the crust.
- The filling can be made with different kinds of chocolate, dark or milk chocolate, etc. I am using semi-sweet chocolate chips in these bars.
- The top of the bars is drizzled with chocolate ganache. Sea salt, caramel, or even plain is as delicious.
How To Make The No-Bake Chocolate Mousse Bars
Crust: The crust is a mixture of butter, and cookie crumbs. Cookies need to process into very fine crumbs. The choice of cookies is yours.
Mousse: Filling is made up of melted chocolate, whipped cream, and cream cheese. Mix the hot cream with chocolate chips. Let chocolate melt completely. Put the cream cheese out of the fridge a few hours before whisking it. Whisk the softened cream cheese until creamy and super soft. Mix the melted chocolate into the cream cheese until smooth. Add the vanilla extract.
Whip the heavy cream until stiff peaks form. fold in the chocolate- cream cheese mixture into the whipped cream and gently fold. The mixture should be silky, smooth, and light chocolate color.
Pour this mixture over the chilled crust. Smooth out the top with a spatula.
Top: You can drizzle sea salt, chocolate ganache, caramel, or any drizzle of your choice on top.

No-Bake Chocolate Mousse Bars
Ingredients
For The Crust
- 2 cups Oreos, Chocolate- Finely Crushed
- 1 cup Gold Oreos, Finely Crushed
- ½ cup Butter, Melted
- ¼ cup Brown sugar, Finely packed
For The Mouse
- 1¼ cup Chocolate chips, Milk or Semi-sweet
- 2 cups Heavy cream
- 1 cup Heavy cream
- ½ cup Powder sugar, sifted
- 8 ounce Cream cheese, Room temperature
- 1 tablespoon Vanilla extract
Top Drizzle
- ½ cup Semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
How To Make The Crust
- Line a 9 X 13 pan with aluminum foil, and set it aside.
- Melt the butter and mix in the brown sugar to dissolve the sugar.½ cup Butter, ¼ cup Brown sugar
- Using a food processor, crush the cookies of your choice to reach a soft crumb.2 cups Oreos, 1 cup Gold Oreos
- Add the crushed cookies to the melted butter and mix well. Pour this mixture into the prepared pan, spread evenly, and press down with the bottom of a measuring cup.
How To Make The Mousse
- Heat one cup of the heavy cream in a saucepan until it starts to bubble on the edge. Remove from the heat and add the chocolate chips to it. Let it sit for 5 minutes, then mix until all the chocolate is melted and the mixture is smooth and silky. Add the vanilla extract.1¼ cup Chocolate chips, 1 cup Heavy cream, 1 tablespoon Vanilla extract
- In a separate bowl, beat the room temperature cream cheese until creamy and lump-free. Add the chocolate mixture to the cream cheese and mix well.8 ounce Cream cheese
- In the chilled mixing bowl, whisk the heavy cream on medium speed, until stiff picks form. Add the powdered sugar and whisk again until the powdered sugar is incorporated.2 cups Heavy cream, ½ cup Powder sugar
- Gently fold the chocolate mixture into the heavy cream. DO NOT OVERMIX.
- Pour the mixture over the chilled crust. Smooth out the top. Drizzle the top with chocolate ganache or sea salt. Leave in the freezer for 4-5 hours or overnight.
How To Make The Ganache
- Pour the ¼ cup of heavy cream into a bowl and bring to a small boil. Pour the chocolate chips into the heavy cream and let the chocolate melt.½ cup Semi-sweet chocolate chips, ½ cup heavy cream
