Line a 9 X 13 pan with aluminum foil, and set it aside.
Melt the butter and mix in the brown sugar to dissolve the sugar.

Using a food processor, crush the cookies of your choice to reach a soft crumb.

Add the crushed cookies to the melted butter and mix well. Pour this mixture into the prepared pan, spread evenly, and press down with the bottom of a measuring cup.
How To Make The Mousse
Heat one cup of the heavy cream in a saucepan until it starts to bubble on the edge. Remove from the heat and add the chocolate chips to it. Let it sit for 5 minutes, then mix until all the chocolate is melted and the mixture is smooth and silky. Add the vanilla extract.

In a separate bowl, beat the room temperature cream cheese until creamy and lump-free. Add the chocolate mixture to the cream cheese and mix well.

In the chilled mixing bowl, whisk the heavy cream on medium speed, until stiff picks form. Add the powdered sugar and whisk again until the powdered sugar is incorporated.

Gently fold the chocolate mixture into the heavy cream. DO NOT OVERMIX.
Pour the mixture over the chilled crust. Smooth out the top. Drizzle the top with chocolate ganache or sea salt. Leave in the freezer for 4-5 hours or overnight.
How To Make The Ganache
Pour the ¼ cup of heavy cream into a bowl and bring to a small boil. Pour the chocolate chips into the heavy cream and let the chocolate melt.
