These gluten-free peanut butter cookies are for both vegan and gluten-free dietary. These cookies are easy to make, delicious, soft, and chewy. They are a perfect combination of GF and Vegan light snacks.
About This Recipe
- This recipe uses only peanut butter as the fat content, and as a result, these cookies have a rich nutty flavor.
- These cookies use coconut sugar for sweetness whih is ahealthy alternative for granulated sugar. Coconut sugar is Coconut sugar is the dehydrated sap of the coconut palm.
- There are no dairy ingredients in this recipe, and we use only almond milk as the liquid.
- I am using gluten-free flour in this recipe because it is a gluten-free recipe, however, if you want to make the vegan version, not the gluten-free one, substitute the flour with AP flour and leave the rest of the recipe as is. I use this GF flour; Gluten-Free Flour
- As the name suggests, no eggs are used in these cookies.
How To Make Gluten-Free Vegan Peanut Butter Cookies
- This recipe is one of the easiest recipes that you can find to have some quick and delicious GF/Vegan cookies.
- We start with creaming the peanut butter with coconut sugar.
- Next step is to add the almond milk and the vanilla extract. The mixture will be semi-thick.
- In a separate bowl mix all the remaining ingredients including the flour, baking oda, and salt, then add this to the peanut butter mixture.
- The cookie dough will be thick enough to shape small balls using your hands.
- Place the balls of dough on the silk mat, and gently press them down. using a fork make some cris cross pattern on them and bake.

Gluten- Free Peanut Butter Cookies

Ingredients
- 1 cup Peanut butter, Preferably creamy
- 1 cup Coconut sugar
- 1 cup Gluten-free flour, Spooned and leveled
- ½ cup Almond milk
- ½ tablespoon Vanilla extract
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
Instructions
- Preheat the oven to 350°F, and line two baking sheets with silk mat, or parchment paper.
- In a medium size bowl, mix the flour, baking soda, and salt. Set aside.1 cup Gluten-free flour, 1 teaspoon Baking soda, ¼ teaspoon Salt
- Cream the peanut butter and the coconut sugar until well mixed.1 cup Peanut butter, 1 cup Coconut sugar
- Add the almond flour and vanilla extract and mix.½ cup Almond milk, ½ tablespoon Vanilla extract
- Add in the flour mixture and combine until no trace of flour is seen.
- Using your clean hands make small globs and place them on the prepared mat. Leave a 2-inch space between them.
- Use the bottom of a measuring cup or a flat glass and gently press the cookies down to lightly flatten them. Using a fork make an X cross shape on the cookies.
- Bake for 8-10 minutes. Let cool for 10 minutes before transferring to the cooling rack.
