Easy, fresh, delicious, and creamy berry ice cream
This ice cream recipe is using a ton of fresh berries to make this cool summer dessert even more delicious and refreshing. This mixed berries ice cream does not need to churn, so you can make perfect ice cream in just a few hours.
About This Recipe
- This ice cream uses a few simple ingredients and comes together in no time.
- I am using fresh berries here, however, frozen berries will work just fine. Make sure you don't thaw the berries. This recipe uses mixed berries of raspberries, blackberries, and blueberries, but you can only use one kind or any combo.
- The source of sweetness in this berries ice cream is the condensed milk. I am using one full can, however, if you like it less sweet, you can use less of the condensed milk.
- The other important ingredient in this recipe is the heavy cream. Heavy cream will add volume and creaminess to the ice cream. I recommend using a cream with at least 30% fat. Do not use Half & Half.
- I prefer using a good quality vanilla extract or vanilla paste. In my opinion, ice cream has to have a vanilla fragrance even if it has a different flavor. I use this Vanilla
- This ice cream recipe will solidify in 3-4 hours but the result will be much better if leave it in the freezer overnight.
How To Make The Mixed Berries Ice Cream- No Churn
- It is very important to keep all the pieces of equipment and attachments very cold. Place the bowl of stand mixer as well as the whisk attachment in the freezer. Line a 9X5 loaf pan and place it in the freezer also.
- Mix the condensed milk and the vanilla paste. Gently add the berries to the milk and mix. Do not over-mix to release the juice and color from the berries.
- Using the cold bowl and the whisk attachment, whip the heavy cream until stiff peaks form.
- Gently fold the whipped heavy cream into the milk.
- Pour the mixture into the cold loaf pan and place in the freezer for at least 3-4 hours or overnight.

Mixed Berries Ice Cream- No Churn

Ingredients
- 1 cup Condensed milk, One can
- 2 cups Heavy cream, At least 30%
- 1 cup Berries
- 1 teaspoon Vanilla bean paste
Instructions
- Place the bowl and the whisk attachment in the freezer.
- Line a 9X5 loaf pan with parchment paper, and place it in the freezer.
- Mix the condensed milk and the vanilla extract. Add in the berries and place this bowl in the fridge.1 cup Condensed milk, 1 teaspoon Vanilla bean paste, 1 cup Berries
- In the cold bowl, use the cold whisk attachment, and whip the heavy cream until soft peaks form.2 cups Heavy cream
- Gently fold in the milk and berry mixture. Just until the mixture is smooth and flowy. Do not over-mix.
- Pour this mixture into the lined loaf pan and cover with cling wrap. Freeze for at least 4-5 hours.
