- This recipe has more ingredients compared to the other muffin recipes, however, it does mean that is more complicated to make! These delicious muffins have non- fancy ingredients that you do not even have to be an active baker to have in your pantry.
- One step that is very important and sets this recipe apart from other banana muffins you have tried before, is the caramelized bananas. Yes! We are going to caramelize the bananas before adding them to the batter. Caramelizing the bananas makes them release their sugar, as a result, we will need less sugar to add.
- Use the most ripen bananas.
- We need some creamy peanut butter which contributes to both the flavor and the texture of the muffins.
- Let's not forget about the oats. We use rolled oats in here, and again these ingredients play a big role in texture as well as the flavor, and needless to say, it is a great source of fiber and vitamins.
- I have incorporated some chocolate chips in this recipe, but if you prefer, you can omit that.
- These muffins are topped with a delicious streusel. The ingredients include flour, oat, brown sugar, and butter.

Ingredients
For The Muffins
- 2 Bananas, Spotted and ripen
- 2 tablespoon Brown sugar, Packed
- ¼ cup Brown sugar, Packed
- ¼ cup Sugar
- 1 cup Milk, 2%
- 2 Eggs, Room temperature
- ½ cup Peanut butter
- ½ cup Rolled oats
- 1 cup All-purpose flour, Spooned and leveled
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- ½ teaspoon Cinnamon
- 1 teaspoon Vanilla extract
- ½ cup Chocolate chips
For The Strusel
- ¼ cup All-purpose flour, Spooned and leveled
- ¼ cup Oats
- 2 tablespoon Butter
- 2 tablespoon Brown sugar
Instructions
How To Make The Muffins
- Preheat the oven to 375°F. Oil spray a muffin pan, and set aside.
- In a small bowl, put the sliced bananas and sprinkle them with 2 tablespoons of brown sugar. Spray a baking sheet with spray and place sugar-coated banana slices in a single layer on the baking sheet. Place in the preheated oven and bake for 10-15 minutes or until banana slices are a golden color.2 Bananas, 2 tablespoon Brown sugar
- While the bananas are caramelizing, mix the two sugar, eggs, milk, vanilla, and peanut butter.¼ cup Brown sugar, ¼ cup Sugar, 1 cup Milk, 2 Eggs, 1 teaspoon Vanilla extract, ½ cup Peanut butter
- In another bowl, whisk together flour, oat, salt, baking soda, baking powder, and cinnamon, and Set aside.1 cup All-purpose flour, 1 teaspoon Baking powder, ½ teaspoon Salt, ½ teaspoon Cinnamon, ¼ cup Oats, 1 teaspoon Baking soda
- Remove banana slices from the oven and mash them up and add to the wet ingredients.
- Add dry ingredients and mix until incorporated. DO NOT OVERMIX. Fold in chocolate chips.½ cup Chocolate chips
- Fill up the muffin cups with the batter. Set aside and make the streusel.
How To Make The Strusel
- Mix all the ingredients and make sure not to blend everything together. The mixture should be lumpy.¼ cup All-purpose flour, 2 tablespoon Butter, 2 tablespoon Brown sugar, ½ cup Rolled oats
- Place a small amount on top of each muffin and top them with a few chocolate chips.
- Bake for 15-20 minutes.
- Let them cool in the pan for 5 minutes then transfer them to the cooling rack.
