Preheat the oven to 375°F. Oil spray a muffin pan, and set aside.
In a small bowl, put the sliced bananas and sprinkle them with 2 tablespoons of brown sugar. Spray a baking sheet with spray and place sugar-coated banana slices in a single layer on the baking sheet. Place in the preheated oven and bake for 10-15 minutes or until banana slices are a golden color.

While the bananas are caramelizing, mix the two sugar, eggs, milk, vanilla, and peanut butter.
¼ cup Brown sugar, ¼ cup Sugar, 1 cup Milk, 2 Eggs, 1 teaspoon Vanilla extract, ½ cup Peanut butter
In another bowl, whisk together flour, oat, salt, baking soda, baking powder, and cinnamon, and Set aside.
1 cup All-purpose flour, 1 teaspoon Baking powder, ½ teaspoon Salt, ½ teaspoon Cinnamon, ¼ cup Oats, 1 teaspoon Baking soda
Remove banana slices from the oven and mash them up and add to the wet ingredients.
Add dry ingredients and mix until incorporated. DO NOT OVERMIX. Fold in chocolate chips.

Fill up the muffin cups with the batter. Set aside and make the streusel.
