- This Orange Olive Oil Cake has a base of simple cake recipes, however, the olive oil gives the cake extra flavor as well as the fat. The higher quality the olive oil is, the better your final bake will be in terms of flavor, texture, and consistency. Olive oil gives this recipe a very velvety texture, almost Baklava-like cake 🙂
- This recipe calls for both all-purpose flours as well as almond flour. Almond flour contributes to the texture and flavor of the cake.
- Let's not forget about the orange juice and orange zest. Orange juice adds a ton of flavor and color to this cake, and orange zest counts for the most natural fragrance a recipe can get.
- The other fragrant ingredient in this cake is cardamom. Cardamom pairs with orange perfectly. It also has a very strong aroma, just careful not to use too much. All we need is ½ teaspoon.
- We are using sour cream which adds a tangy flavor and some fat to the recipe.

How to make this Orange Olive Oil Cake
- This recipe does not require a stand mixer. Mix all the dry ingredients, and set them aside.
- Using your clean hands massage the orange zest with the sugar. The sugar coarse texture releases the orange zest's oil and aroma. Whisk the sugar with the orange juice. Add eggs and vanilla. Mix well.
- Add in the sour cream and mix until all is well blended. About 3-5 minutes.
- Time to add the dry ingredients. Use a rubber spatula to mix the dry ingredients.
- Stream in the olive oil, and mix gently.
- Bake in a pan lined with parchment paper.

Ingredients
- 1 cup Sugar
- 1 tablespoon Orange zest
- 1 Orange- Medium size, Juiced
- 4 Eggs, Room temperature
- 1 tablespoon Vanilla extract
- ⅔ cup Sour cream, Room temperature
- 1 cup Almond flour
- 1 cup All-purpose flour
- 2 teaspoon Baking powder
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- ½ teaspoon Cardamom powder
- ¾ cup Olive oil, Extra virgin
Instructions
- Preheat the oven to 350°F, and line the bottom of an 8-inch pan with parchment paper, and set aside.
- whisk together all the dry ingredients and set them aside.1 cup Almond flour, 1 cup All-purpose flour, 2 teaspoon Baking powder, 1 teaspoon Baking soda, ¼ teaspoon Salt, ½ teaspoon Cardamom powder

- Add in the eggs and whisk vigorously, for about 3- minutes. add vanilla extract.4 Eggs, 1 tablespoon Vanilla extract
- Add in the sour cream. Mix until well blended. Using a rubber spatula, add the dry ingredients and gently fold them in.⅔ cup Sour cream
- Stream in the olive oil, and gently mix. Bake for 40-50 minutes.¾ cup Olive oil
- After 20 minutes open the oven and cover the pan with a piece of tin foil. This prevents the top from browning too much.
- Let cool in the pan for 10 minutes, and then flip on a cooling rack. Dust the top with powdered sugar.
