Ingredients
 

  • 1 cup Sugar
  • 1 tablespoon Orange zest
  • 1 Orange- Medium size, Juiced
  • 4 Eggs, Room temperature
  • 1 tablespoon Vanilla extract
  • cup Sour cream, Room temperature
  • 1 cup Almond flour
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • ¼ teaspoon Salt
  • ½ teaspoon Cardamom powder
  • ¾ cup Olive oil, Extra virgin

Instructions
 

  • Preheat the oven to 350°F, and line the bottom of an 8-inch pan with parchment paper, and set aside.
  • whisk together all the dry ingredients and set them aside.
    1 cup Almond flour, 1 cup All-purpose flour, 2 teaspoon Baking powder, 1 teaspoon Baking soda, ¼ teaspoon Salt, ½ teaspoon Cardamom powder
  • Whisk together the sugar, orange juice, and orange zest.
    1 cup Sugar, 1 tablespoon Orange zest, 1 Orange- Medium size
  • Add in the eggs and whisk vigorously, for about 3- minutes. add vanilla extract.
    4 Eggs, 1 tablespoon Vanilla extract
  • Add in the sour cream. Mix until well blended. Using a rubber spatula, add the dry ingredients and gently fold them in.
    ⅔ cup Sour cream
  • Stream in the olive oil, and gently mix. Bake for 40-50 minutes.
    ¾ cup Olive oil
  • After 20 minutes open the oven and cover the pan with a piece of tin foil. This prevents the top from browning too much.
  • Let cool in the pan for 10 minutes, and then flip on a cooling rack. Dust the top with powdered sugar.
