    Spice Coffee Cake

    A super fluffy and delicious coffee cake with a touch of Fall spices

    This delicious coffee cake is loaded with coffee flavor and a Fall spice ribbon runs through the cake. This spice coffee cake is a perfect coffee cake with a touch of warm Fall flavors.

    About This Recipe

    • This recipe contains three different parts 1) The crumb topping 2) The coffee cake, and 3) the spice ribbon. Each part has its load of flavor and a different texture.
    • This cake is very fun to make and despite the look of three layers, it is super easy to make. And needless to say, with a load of different flavors, it is absolutely delicious.
    • All three layers contain coffee granules to run that coffee aroma throughout the cake. Also, the use of fragrant spices makes this cake a perfect treat for an Autumn party.

    How To Make The Spice Coffee Cake

    Make The Topping;

    • Start by preparing the crumb topping. The topping contains flour, butter, brown sugar, coffee crystals, and our Fall Spice Blend from Spice Blends post.
    • Mix all the dry ingredients, and add the cold diced butter, then rub the butter through the dry ingredients to coat all the butter pieces with the dry mixture. This will create the little parts of the butter and flour mixture in the topping. Make sure to break down any large butter piece. They should be no larger than a pea size. Set this aside and move on to making the next layer.

    Make The Ribbon;

    In a small bowl mix the brown sugar, Coffee Crystals, and the Fall spice Spice Blends. Set aside.

    How To Make The Cake;

    • Mix all dry ingredients. In a separate bowl mix, the sour cream brewed coffee, and vanilla extract and set aside.
    • Beat the butter, both sugars, and oil. beat until the mixture is light and fluffy. About 5 minutes. We are trying to aerate the mixture as much as possible.
    • Add the eggs one at a time and beat well after each one.
    • Add the dry ingredients alternating with wet ingredients, to the butter mixture by starting and ending with the dry ingredients.
    • Pour half of the mixture into the greased pan, sprinkle the ribbon mixture add the second half of the batter, and smooth it out with a spatula. When adding the second half of the mixture, drop the mixture into a few large dollops. this makes spreading the batter much easier.
    • Cover the entire surface with the crumb topping. Bake and enjoy.

    Ingredients
     

    For The Crumb Topping

    • 1 cup All-purpose flour, Spooned and leveled
    • ½ cup Brown sugar, Packed
    • ½ cup Butter, Cold and diced
    • 1 tablespoon Coffee crystals
    • 1 teaspoon Fall spice, See notes
    • ¼ teaspoon Salt

    For The Ribbon

    • ½ cup Dark brown sugar
    • 1 teaspoon Fall spice, See notes
    • ½ teaspoon Cinnamon
    • 1 tablespoon Coffee crystals

    For The Coffee Cake

    • 3½ cup All-purpose flour, Spooned and leveled
    • 2½ teaspoon Baking powder
    • ½ teaspoon Baking Soda
    • 1 tablespoon Fall spice, see notes
    • ½ teaspoon salt
    • 1 cup Sour cream
    • 1 tbs Vanilla extract
    • ¾ cup Brewed coffee, Strong
    • 1 tablespoon Coffee crystals
    • ¾ cup Butter, Room temperature
    • ½ cup Oil
    • 4 Eggs
    • 1 cup Sugar
    • 1 cup Brown sugar

    Instructions
     

    • Preheat the oven to 350, and well butter a 9X13 inch pan. Set aside.

    Make The Topping

    • Mix all the dry ingredients, then add the diced butter. With your fingertips coat all butter pieces with the flour mixture. If there is a large piece of butter break it up. Set this mixture aside.
      1 cup All-purpose flour, ½ cup Butter, 1 tablespoon Coffee crystals, 1 teaspoon Fall spice, ¼ teaspoon Salt, ½ cup Brown sugar

    How To Make The Middle Ribbon

    • In a small bowl mix all the ingredients for the ribbon and set it aside.
      ½ cup Dark brown sugar, 1 teaspoon Fall spice, ½ teaspoon Cinnamon, 1 tablespoon Coffee crystals

    How To Make The Cake

    • Sift all the dry ingredients and set side.
      3½ cup All-purpose flour, 2½ teaspoon Baking powder, ½ teaspoon Baking Soda, 1 tablespoon Fall spice, ½ teaspoon salt
    • In a measuring cup mix all the brewed coffee, coffee granules, vanilla extract, and sour cream. Set aside.
      1 cup Sour cream, 1 tbs Vanilla extract, ¾ cup Brewed coffee, 1 tablespoon Coffee crystals
    • Set the stand mixer on the paddle attachment. Beat the butter, two sugars, and the oil for good two minutes. Take your time with this step. The mixture should look light and fluffy.
      ½ cup Oil, 1 cup Sugar, 1 cup Brown sugar, ¾ cup Butter
    • Add the eggs, one at a time, and mix well after each one.
      4 Eggs
    • Remove the bowl from the stand mixture, and using a spatula, add the dry ingredients alternating with wet ingredients. Start and finish with dry ingredients.

    How To Assemble The Cake

    • Pour half of the mixture into the greased pan, and smooth out into the pan with a spatula.
    • Sprinkle the ribbon mixture all over the batter.
    • Drop dollops of the batter over the ribbon layer, and smooth out with a rubber spatula. Make sure the batter is touching the pan all around.
    • Sprinkle the topping all over the batter, and bake for 40-45 minutes. The top will turn a golden color. Let cool for 15 minutes, then cut into squares and remove from the pan.

    Notes

    • Get the recipe for the Fall spice from the Spice Blends post.
    • To make spreading the second layer of the batter over the ribbon, it is easier to drop dollops of the batter and then spread with an offset spatula.
